Reply Baking 'n' Books July 12, 2011 at 4:51 pm I just made a zucchini cake/loaf with coconut oil in it – it’s good! Not strong and coconut-y at all – but a nice twist. Maybe try adding the butter or oil in small amounts to baked goods verus using the coconut itself? Reply jenna k July 12, 2011 at 3:41 pm i’m excited! i’m not usually that into coconut, but i get weird cravings for it sometimes. Reply Cait's Plate July 12, 2011 at 4:36 pm Margaritas sound like just what you need after that camping post and this one! I’m a firm believer that they can fix anything 🙂 AND sometimes the best things out of the kitchen start out as a disaster at first! Can’t wait to see what you made. Reply Averie @ Love Veggies and Yoga July 12, 2011 at 4:38 pm Oh wow…coconut. Have fun! And wash any little kitchen mishaps down with a margarita. Or a glass of wine. Always works wonders 🙂 Reply Jen July 12, 2011 at 4:58 pm Ah, I’m excited! Coconut is one of my weaknesses. I’ve been craving coconut ice cream lately. If you have an ice cream maker, maybe you should make that next! I think yes. Reply Nik July 12, 2011 at 5:12 pm Color me quite intrigued. Can’t wait to see what you did!
