So, I’ve mentioned once before that during the month of July I’m doing some blog posts on behalf of Athenos Feta cheese. They asked me if I wanted to try their challenge of eating a salad with feta on it five times a week all month long, and naturally I said yes because I have a fascination with foodie challenges such as this. Plus, I just love feta. Really.

Take whole wheat pita bread and top with thinly sliced tomatoes, thinly sliced red onion, some halved kalamata olives, some feta and a little Greek Vinaigrette dressing. Grill for about 5-10 minutes and enjoy. This is SO good!

July 9, 2010 at 7:55 amI bought Jalapeno Spinach Flax homemade pasta at my farmer’s market, so I boiled the pasta, then sauteed mushrooms, jalapenos, onions, kale, and tomatoes, with garlic in a bit of olive oil. I roasted some shrimp and red peppers in olive oil, garlic, and red pepper flakes. When they are all ready, I toss it all together and sprinkle some feta on, which really cuts the yummy, spicy, heat of the pasta, vegetables, and shrimp. The feta adds that hint of creaminess and the perfect bite. Mmmm, I’m salivating at the thought of such a spicy, feta-y dish!

I loooove feta and when I read the feta post I had to stop by and leave my mark. I love a good feta and spinach salad with cherry tomatoes and a maple balsamic dressing. Also spring mix with walnuts and strawberries with a malt vinegar/dijon mustard dressing is excellent with feta. Feta just adds the perfect punch of flavor.

Making the ground chicken patty and then studding it with feta cheese and spinach…so delicious. The cheese gets brown and soft – plus, it adds a salty, nutty flavor that is unbeatable!

Definitely cut up some sundried tomatoes packed in olive oil and herbs (don’t worry about the oil, it’s good in the cheese) and scrape into a bowl of the feta. Then chop up some fresh basil and add to the mix. Now add some roasted pine nuts (or fresh, it is delicious both ways). Blend until smooth, but not creamy. Add more olive oil as necessary. Cut up some more pine nuts for crunchiness, and then add little bits of the ingredients to flavor more strongly as desired.
FABULOUS. Totally worth all the calories!

Sometimes I throw in whatever random veggies I have in the fridge with it and sometimes I put some fresh cracked black pepper on top. The salty feta is absolutely addictive and since its the same color as the egg whites you never know if your bite will have it in it or not so when it does its a delicious surprise for the tastebuds! So, so, good. I want feta now.

For me feta is most yummy in scalloped potatos. I sprinkle just a little and it stays clumpy so there is a cheese surprise in some of the bites.

I am a feta fiend and like it on pretty much anything….over pita sandwiches with falafel or tabbouleh, over any green salad, or just simply sprinkled over a plate of sliced tomatoes and avocados with a little olive oil and balsamic vinegar drizzled on top. One of my all time favorite recipes including Feta is Ina Garten’s orzo salad with Feta and roasted vegetables. So. good.

July 9, 2010 at 10:57 amA great make-ahead lunch or dinner to keep in the fridge – cook the whole wheat/higher protein spaghetti noodles, 4-5 servings’ worth. While that is cooking, saute a bag of spinach in a little olive oil, season as you like. When the spaghett is done, drain and stir in the saute’d spinach and a container of feta, toss together – great to eat cold or heated up! I enjoy your blog!

I love feta on roasted brussel sprouts & pancetta during the fall/winter. But during the summer, a yummy salad mix of: feta, cantaloupe (or grilled peaches or both!), red onions (after soaking in vinegar + water to take the bite off), grilled zucchini & cremini mushrooms, and topped w/ pepitas/slivered almonds and a reduced balsamic dressing. My standard everyday salad! 😉

I make the soup with many of the veggies that grow in my neighbor’s garden,( I don’t have a green thumb). I use tomato juice, hot sauce, cilantro, peppers, summer squash, cucumbers, tomatoes, sweet onions, zucchini, and even green beans! The soup sits in the fridge for a day to blend flavors and served with a sprinkle of feta to make it delicious!

Couldn’t find the exact recipe, but here’s the gist: I put some orzo on to boil, and while waiting for that make a quick pan sauce out of tomatoes (fresh or canned), garlic, white wine, and herbs/spices. Next I mix the sauce with the orzo, toss in some defrosted shrimp, add a handful of feta – then dump the whole thing into an oven safe dish and bake until the shrimp are cooked. Mouth wateringly good every time.

July 16, 2010 at 8:49 amThis is a weird combo , I know, but it is GOOD! Romane lettuce spears filled with a mixture of tunafish, Athenos Feta (crumbled) and hotsauce. It’s a great healthy, lo-cal lunch!!!
