Feta Friday, Take One

So, I’ve mentioned once before that during the month of July I’m doing some blog posts on behalf of Athenos Feta cheese. They asked me if I wanted to try their challenge of eating a salad with feta on it five times a week all month long, and naturally I said yes because I have a fascination with foodie challenges such as this. Plus, I just love feta. Really.

And now we have Feta Friday. Every Friday y’all have a chance to win this super sweet feta prize pack. Just leave a comment on this post telling me your favorite way to use feta and I’ll pick a winner at random this evening when I get home to California. I’ll post the winner in the morning.

    the best really is on top of pizza as far as i’m concerned…cold, hot, doesn’t matter because the feta is ALWAYS amazing!

    Great addition to salads in place of or in addition to turkey/chicken. Wrapped in chicken, on a tortilla with salsa and melted. mmm.

    I love feta, and Athenos is the best! I love it crumbled over a salad, in a pita with hummus or falafel, in an omelet with spinach, on pizza, pasta, anything!

    I love using feta to top off a simple pasta dish – whole wheat pasta drizzled in olive oil and mixed with pesto. Mmmm top it off with feta – it’s simple and delicious!

    I am obsessed with spanakopita–the spinach/feta pastry from Greek restaurants, so anything with the warm spinach/feta combo is my favorite–omlette, stir-fry, etc!

    Favorite cold way: on a big salad with red onion, olives, and tomatoes.

    Favorite hot way: TIE! Melted into pasta or in an omelet with sundried tomatoes, olives, parsley, and some smoked salmon. Yum.

    I just recently discovered feta (and any cheese not on pizza) recently… I know, sheltered life (really lactose intolerance)… I love it on a greek salad! After reading some of the other comments for ideas i want to try it in an Omelet…

    I love using a little feta in vinaigrette-based pasta salads. I’ve also put it in vinaigrettes and shook it up to add extra flavor. Holy moly, it’s great!

    My favorite way to eat feta:

    1. Scoop out a nice, thick slab.
    2. Put on a pretty plate.
    3. Drizzle olive oil and oregano on top.
    4. Eat and enjoy. Mmmmmmm!!! 🙂

    Not sure if I can enter here because I already entered over at Carrots & Cake, but I love feta in omelets. My mom also makes this great pasta salad w/ whole grain pasta, fresh pesto, black olives and feta. We then let it sit in the fridge. So yummy!

    I LOVE feta! Especially sprinkled on top of a Greek pizza I make, which is topped with sauteed green veggies (zucchini, spinach, etc.), shredded white cheese, and fresh tomotoes. A classic Greek salad is always a winner in my book, too!

    my family is greek so we buy (and eat) feta in bulk. my favorite way to eat it is sprinkled on a spring lettuce with tomatoes and red onions and dressed with balsamic vinegar and olive oil. when the salad is finished, i sop up all the feta crumbles and dressing with good bread. yummm

    My stepmom’s family is Greek so there is a lot of feta cheese consumption. My absolute favorite has to be inside, fresh out of the over spanikopita. Heavenly. Also love it on salad, sandwiches, falafel, quiche, or just right out of the container.

    oh how i love feta!! i spent a summer in greece, so my favorite way has to be a REAL greek salad (horiatiki) – cucumbers, tomatoes, red onion, kalamata olives, oregano, evoo, and a huge square of fresh feta cheese. sooooo good.

    Feta ..In a hot grilled sandwich, with all sorts of yummy veggies . My husband is from Bulgaria, a little country right above Greece , so we put it on absolutely everything : from salads to french fries.

    I throw a salmon fillet in a foil packet, top with roasted red pepper, olive oil, italian seasoning, and feta and bake it until the fish is done. Tasty, fast, and makes the people at work jealous the next day 🙂

    I make Greek Pizza:
    Take whole wheat pita bread and top with thinly sliced tomatoes, thinly sliced red onion, some halved kalamata olives, some feta and a little Greek Vinaigrette dressing. Grill for about 5-10 minutes and enjoy. This is SO good!

    Mmm… feta. I love it in a simple salad of leafy greens with avocado, cucumbers and a simple dressing of olive oil, balsamic vinegar, salt and pepper. Toss and serve. So good.

    I LOVE roasting Portobella mushroom caps with Balsamic Vinegar and Olive Oil, then covering them with chopped fresh figs and feta cheese and broiling for 2 minutes more. DELISH!!

    I bought Jalapeno Spinach Flax homemade pasta at my farmer’s market, so I boiled the pasta, then sauteed mushrooms, jalapenos, onions, kale, and tomatoes, with garlic in a bit of olive oil. I roasted some shrimp and red peppers in olive oil, garlic, and red pepper flakes. When they are all ready, I toss it all together and sprinkle some feta on, which really cuts the yummy, spicy, heat of the pasta, vegetables, and shrimp. The feta adds that hint of creaminess and the perfect bite. Mmmm, I’m salivating at the thought of such a spicy, feta-y dish!

    Love Feta on all salads! The best way is to sprinke it on this salad; grilled chicken with mandarin oranges, sliced strawberries, and dried cranberries on top of baby spinach topped with a little balsamic vinaigrette.

    I love to make a faux creamy dressing with feta! I use plain greek yogurt, feta crumbles, dill and lemon juice. Mix all together and it’s fab!

    the way they use it in greece- a HUGE 4×4″ slab of it… literally a SLAB… on a bed of onions, tomatoes, cucumbers, oil/vinegar and oregano. it’s fun to just look at the slab and then take your knife & fork and attack it into little pieces all over those veggies. oh yum!

    the way they use it in greece- a HUGE 4×4″ slab of it… literally a SLAB… on a bed of onions, tomatoes, cucumbers, oil/vinegar and oregano. it’s fun to just look at the slab and then take your knife & fork and attack it into little pieces all over those veggies. oh yum!

    okay, i’m usually not a big commenter but I have been reading this blog religiously every morning for the past year and a half. I loooove feta and when I read the feta post I had to stop by and leave my mark. I love a good feta and spinach salad with cherry tomatoes and a maple balsamic dressing. Also spring mix with walnuts and strawberries with a malt vinegar/dijon mustard dressing is excellent with feta. Feta just adds the perfect punch of flavor.

    omg a little black bean salad is so yummy. I use a can of black beans, a jar of the tomatoless corn salsa from Trader Joe’s, and a package of feta crumbled. Toss and chill. YUM.

    I love using feta on salads…simply and delicious – but one way that I love using it is in chicken burgers. Making the ground chicken patty and then studding it with feta cheese and spinach…so delicious. The cheese gets brown and soft – plus, it adds a salty, nutty flavor that is unbeatable!

    I can only pick one?! I love it in an omelette with kalamata olives, tomato, and spinach. OR – since I really can’t pick just one – it is also delicious mixed in a salad of cubed tomato, cucumber, kalamata olives, and homemade dressing of champagne vinegar, EVOO, cracked black pepper, and fresh basil.     The best way I’ve ever had feta at home was a steamed sweet potato, half an avocado, salsa and feta all wrapped up in a whole wheat tortilla. Tasted like a mexican wrap. Love repeating it in the summer.

    The Iranian way! The traditional persian breakfast consists of bread, goat cheese and tea. I toast a bit of bread, sprinkle some feta on it, throw some mint leaves in there, fold it over and YUM! that’s my favorite way to eat FETA!! 🙂

    My favorite way to use feta is definitely in a whole wheat wrap with either turkey or a veggie burger. The flavor absolutely takes the sandwich from plain/average tasting to a GOURMET treat! 🙂

    I actually have never tried feta before, so I would definitely love to try it!

    It looks like it would be amazingly good as everyone keeps talking it up! I’ve seen it in salads and on sandwiches. I think I would like it on salads the best because I’ve heard it is super flavorful.

    Feta is thelo9ve of my life, I can eat it with everything, it goes well even with tea LOL! Most I love to bake feta for 20 min at 350F in tomato sauce and serve with dill on top and pita bread and green olives!Holly Yum! 🙂

    Favorite way to eat feta? Definitely cut up some sundried tomatoes packed in olive oil and herbs (don’t worry about the oil, it’s good in the cheese) and scrape into a bowl of the feta. Then chop up some fresh basil and add to the mix. Now add some roasted pine nuts (or fresh, it is delicious both ways). Blend until smooth, but not creamy. Add more olive oil as necessary. Cut up some more pine nuts for crunchiness, and then add little bits of the ingredients to flavor more strongly as desired.

    FABULOUS. Totally worth all the calories!

Sometimes I throw in whatever random veggies I have in the fridge with it and sometimes I put some fresh cracked black pepper on top. The salty feta is absolutely addictive and since its the same color as the egg whites you never know if your bite will have it in it or not so when it does its a delicious surprise for the tastebuds! So, so, good. I want feta now.

    I love adding it on my grilled cheese along with american or provolone or any other cheese works for me. It doesnt melt and gives hot pressed sandwiches some texture. so yum!

    I love to make turkey burgers with ground turkey, spinach sauteed in garlic, sliced black olives and of course FETA! mix them all together with some salt, cumin, and cracked black pepper and throw them on the grill for delicious HEALTHY burger alternatives! The melted feta is the best part!

    I love feta on salads…I just saw an article in the Philadelphia Inquirer (yesterday’s food section) that included a recipe for a Greek watermelon salad with kalamata olives, feta, and watermelon (of course!). I’ll have to try that out as well 🙂

    That is such a cool water canister!
    For me feta is most yummy in scalloped potatos. I sprinkle just a little and it stays clumpy so there is a cheese surprise in some of the bites.

    Feta! I am a feta fiend and like it on pretty much anything….over pita sandwiches with falafel or tabbouleh, over any green salad, or just simply sprinkled over a plate of sliced tomatoes and avocados with a little olive oil and balsamic vinegar drizzled on top. One of my all time favorite recipes including Feta is Ina Garten’s orzo salad with Feta and roasted vegetables. So. good.

    I like feta on a number of things, but I love the crumbled variety that’s easy to eat straight out of the carton. I mean, you can’t do this with block cheddar, etc…you have to slice it, grate it, etc. But with feta, just stand in front of the fridge and EAT.

    A great make-ahead lunch or dinner to keep in the fridge – cook the whole wheat/higher protein spaghetti noodles, 4-5 servings’ worth. While that is cooking, saute a bag of spinach in a little olive oil, season as you like. When the spaghett is done, drain and stir in the saute’d spinach and a container of feta, toss together – great to eat cold or heated up! I enjoy your blog!

    Love love love chicken breasts stuffed with sauteed spinach, onions and garlic and FETA! Pan seared and oven baked. It’s pretty much my go-to dinner and God love the friends who have to eat it with me way more than they would prefer! Feta never fails 🙂

    SALAD
    1 lb. red new potatoes, cooked and quartered
    1/2 cup sliced black olives
    4 oz. feta cheese
    One 14 oz. can artichoke hearts, drained and quartered

    Oh, I had feta for breakfast today, and it was so good!
    On a sandwich thin, I spread some Sabra hummus, a layer of spinach, mozzarella, sliced tomato and sprinkled with feta. Then popped it in the toaster over while I took a shower, and when I was done, I had the perfect breakfast pizza! Such a great way to start my Friday!

    Everything is “betta with feta!” My favorite use of feta is sliced on a rosemary foccacia bread, with pesto, spinach, tomato and slightly pressed in a panini maker. Of course with lots of ketchup!

    I have a recipe for roasted veggies with orzo that calls for feta…so good. But the best part is when you have the bits of leftover feta on your plate mixed with the vinaigrette and you schmoosh it all on a piece of bread…super Yummy!

    i love to make eggs in purgatory and then, when the whites of the eggs JUST begin to set, sprinkling feta on top and sticking it under the broiler. dunk chunks of crusty bread in the mix of runny yolk, tomato sauce and melty cheese. so yum.

    May favorite use of feta is with spinach and couscous… saute fresh garlic and pine nuts, cook couscous according to directions, mix together with fresh spinach and feta… perfect, healthy and filling side dish (or left overs for lunch of course!)… give it a shot!

    Feta on everything is great!
    I love feta on roasted brussel sprouts & pancetta during the fall/winter. But during the summer, a yummy salad mix of: feta, cantaloupe (or grilled peaches or both!), red onions (after soaking in vinegar + water to take the bite off), grilled zucchini & cremini mushrooms, and topped w/ pepitas/slivered almonds and a reduced balsamic dressing. My standard everyday salad! 😉

    My favorite is feta pork chops. Boneless pork chops seasoned with basil, oregano, garlic, rosemary, and lemon juice, cooked in a skillet with olive oil. When the meat is done, top with tomato/basil feta and eat when melted.

    When I lived in Chicago I would go to a restaurant called Demetrio’s. They did a feta and zuchinni omelette that was out of this world. I love the combination of the sweet zuchinni and the briny feta. This is my favorite Sunday breakfast.

    I’m in HOT Georgia and making a COLD gazpacho soup sprinkled with crumbled feta cheese! I make the soup with many of the veggies that grow in my neighbor’s garden,( I don’t have a green thumb). I use tomato juice, hot sauce, cilantro, peppers, summer squash, cucumbers, tomatoes, sweet onions, zucchini, and even green beans! The soup sits in the fridge for a day to blend flavors and served with a sprinkle of feta to make it delicious!

    Feta is key in my one of my favorite quick but fancy-looking dinners. Couldn’t find the exact recipe, but here’s the gist: I put some orzo on to boil, and while waiting for that make a quick pan sauce out of tomatoes (fresh or canned), garlic, white wine, and herbs/spices. Next I mix the sauce with the orzo, toss in some defrosted shrimp, add a handful of feta – then dump the whole thing into an oven safe dish and bake until the shrimp are cooked. Mouth wateringly good every time.

    Definitely on top of a thin crispy pizza! When I worked a Greek restaurant I literally used to snack on a block of feta with pepperoncinis… delllish.

    I love it on tomato and cucumber salad with Greek Olives and a red wine vinaigrette! Or, in Spanikopita. Mmmmmmmmmm, Spanikopita.

    Obviously the best way to eat feta is on anything! But my current favorite is in an egg scramble (too lazy to make it an omlet) with broccoli. Yum!

    There’s this great spaghetti squash recipe I’ve used in the past that calls for feta…it’s also got basil, black olives, chopped tomatoes, and onion. It’s reaaallly yummy! But I love feta on ANYthing – sandwiches, salads, pasta, pizza, straight-up…whatever!

    Homegrown cucumbers, bell pappers, and tomatoes toped with Athenos Feta cheese (crumbled) with a EVOO and balsamic vinegar. Delicious! =D

    Feta, oh how I love thee!!!!!!!!!!
    Let me count the ways…
    1. always great in a salad..Greek, paired with cranberries, apples, and walnuts, oo really just added to any salad combination
    2. With wine…
    3. on top of steak, in a bit of a melt, the best it can.
    4. on Melba with tomatoes and olives and a drizzle of olive oil (swoon)
    5. on a Greek pizza
    6. Artichoke, olive, and feta salad
    7. on Bruchetta…think Italian meets Greek
    8. added to pasta of any kind
    9. stuffed tomato…with feta and orzo and whatever spices or herbs I have on hand
    10. In an omlette, fritatta, quiche or egg dish of any kind
    11. by spoon strait out of the container…Is that wrong?

    This is a weird combo , I know, but it is GOOD! Romane lettuce spears filled with a mixture of tunafish, Athenos Feta (crumbled) and hotsauce. It’s a great healthy, lo-cal lunch!!!
