Full Friday

Hi friends! HAPPY FRIDAY!!!!!!!

As I mentioned in my prior product review post, I have been bouncing off the walls with energy all day. No coffee, people! Must be the greens……….

As you know if you read my prior post, I started my day with some berry flavored Amazing Grass + bar.

The combo (with an added Friday Kombucha, obvi) held me over quite nicely with no crash until my 8:15 breakfast

Ahhhhh yes, I had the most AMAZING bowl of oats this morning!!!

  • ~3/4 cup oats (the last big at the bottom of the bag!) with 1/2 cup almond milk + 1 cup water
  • 1 BIG scoop pumpkin seed butter
  • 1/2 banana
  • tons of cinnamon!

Also at work, it was free food friday and I snagged a big slice of the juiciest, crispest watermelon ever:

I was STUFFED after this breakfast!!! I think my “huge scoops” of nut butter = like a normal 2-3 tbsp. 😉

Work was crazy busy and I baked all the regular breads PLUS 100 vegan cupcakes PLUS 1 vegan chocolate cake. I was soooo busy!! I should seriously start a vegan cake factory in my garage……. 😉

After work I raced over to Daily Eats and met my lunch date—sweet Amanda! We had a great lunch and talked non-stop about everything. I was feeling rather dehydrated after my busy work day (was too busy to drink my normal amount of water!), so I ordered a HUGE glass of water and the largest Greek salad known to man—–

This bowl is actually called a “shredder bowl” on the menu and consists of a multi-layered salad. The first layer is brown rice and then there is a salad layer on top of the rice with crisp lettuce, yellow peppers, cucumbers, black olives, garbanzo beans and topped with fluffy feta cheese! I ordered the dressing on the side and used it sparingly because with all that stuff goin’ on in the salad, it really wasn’t necessary.

I ate the entire thing…so good! I think between this and my greens this morning, I have MORE than certainly filled my veggie quota for the day! 😉

After lunch, I headed down to Whole Foods to grab some essentials……

  • Amaranth
  • New chia cereal!
  • Raw cashews
  • Raw almond butter
  • Vanilla almond milk

  • Crap-ton of oats
  • Raw sunflower seeds
  • Sesame seeds
  • Raw almonds
  • Raw walnuts
  • Some interesting goji berry/cashew/dark chocolate concoction that was NOT on the list… 😉
  • Raw goat cheese (saw this on Gina’s blog a long time ago and finally found it!!)
  • Raw zucchini hummus

If you can’t tell, I bought a ton of raw food at the store today. I have been feeling so great the last week or so after incorporating more raw foods into my diet (specifically more produce!) that I want to keep it up! Seriously, I am sort of a skeptic when it comes to food movements like this……and I haven’t even been eating all raw, or even MOSTLY raw, but just the fact that I am trying and incorporating more whole fruits and veggies in my diet has made a SIGNIFICANT difference in the way I feel and my overall energy levels. I’ve been having better quality sleep at night (not waking up at all) and have been waking up when the alarm goes off feeling refreshed and full of life. Also, my skin has cleared up a bunch from the break-out cycle it has been stuck in for the past 3 months. I’m VERY happy about that!

Once home, I putzed around for awhile (as in iced shins and wrote emails) and then came downstairs to make a little appetizer plate. I’m eating dinner at home with the parents tonight and sleeping here because tomorrow morning my mom and I are going to a real live FARMER’S MARKET!!!!!!!!!! Can you tell I am excited?!

My snack plate included some zucchini hummus (not as creamy and fluffy as I would have hoped for…meh), raw goat cheddar cheese and organic baby carrots—

I was a little hesitant about this cheese because I have never tried anything like it before, but I LOVED it. It was creamy and soft. I have read that goat cheese is much easer to digest than cow’s milk cheese, too.

And then for dinner, my mom and I made one of our favorite recipes– caramelized scallops on homemade potato pancakes with smoked chili cream sauce from the Black Dog Tavern Cookbook. We recently made this back in January but made it again tonight because it is OH! so good 🙂

I had a half a glass of wine with dinner and then switched to water. WHO AM I?!

And I may or may not have had the tiny last 2 pieces of my dark chocolate toblerone bar. Thanks, Kristen!!! =)

Tomorrow I am waking up at 5:15 and running 5 miles biking 12 miles. SO sad that I won’t be running. I know when I get out there and see all those early morning runners I’m even going to be more sad and hopefully my bike won’t accidentally veer off course and hit them. That was a total joke. I’m hoping to just get there, pedal my heart out on my Target bike and blast a new training mix that my dad burned me. And then my mom and I are leaving for the farmer’s market at 8:30! GAHH I can’t wait.

Now it is time for a hot bath and more Thrive. Catch ya in the AM!

    Pumpkin seed butter? I have never seen this anywhere before, did you buy it or make it? Have fun at the farmer’s market!

      Actually, I was lucky enough to receive the pumpkin seed butter as a gift from my friend VeggieGirl! I have never seen it in stores and I know she ordered it online. Each serving of pumpkin seed butter has a whopping 10.5 grams of protein!! it is amazing stuff and very delish!

    You need to come to the “head house” farmer’s market in Philly one day! You would be soo happy! I’ve never seen so many interesting fruits and veggies before and all so colorful.

    I’ve had that raw cashew/cocoa nib/goji berry mix before from whole foods. It’s AMAZING. I always enjoyed it sprinkled on top of (soy) yogurt. Trust me, you will not regret that purchase!

    I know that it stinks that you cant run right now, but PLEASE do not push it…. my mom was training to run the marathon last year and pulled the muscle in the back of her leg, but would not stop running. After a couple more training sessions she tore the muscle in the back of the leg and she has been told to NEVER run again!! you dont wanna do that, do you??? Also, it looks like you are going back to mainly eating vegetarian again… is this true??

    Hi Jenna, I was wondering what kind of surface you’ve been running on. When I had my injury, I was running on sidewalks. My doctor told me that it was contributing to my problem. After taking a break from running, I switched to grass/dirt paths and I’ve never had an injury since. Hope this helps!

    Wow, your energy is just palpable in this post! Glad to see you’re feeling so good… I, too, have been eating high-raw, and feeling so light and nourished 🙂 And yay for raw sunflower seeds – I go through those the way you go through almond butter… soooo addictive!!

    I know how you feel about not being able to run, and having to bike instead. Due to a knee injury (I’m seeing physical therapist next week, and will find out what it is, I think it’s shin splints like you have), I have not been able to run for two months so I am biking instead. I went yesterday and saw some runners on my bike path and wished I could jump off my bike and run with them. You made a good decision to scale back on the running, if I had done that I don’t think I would be injured.

    how exciting that we are FINALLY in the season that has nice juicy watermelon. mmm. lately ive been going with more raw foods too, and i agree. i feel so much better – almost energized, i cant really explain it.

    Greek salads are the best! I LOVE Farmers markets! I just dedicated a pot to them this past Thursday — have so much fun with your mom!!!
