Hi guys!
Thank you so much for the little break last night. I really needed it! I know I am pretty personal on the blog but of course there are things going on in my life that I can’t share with the entire world wide web, but be assured all is fine! Everyone needs a little rest sometimes. I took some time to catch up on my reading materials—

Last night I also made an interesting, and surprisingly gourmet, little dinner for myself. Risotto has been on my mind since I made mushroom risotto for 22 people last week (was that only last week?!) and so tonight I did a little re-make, just for myself.

No recipe, really, just a hodge-podge of stuff I had laying around the house. I cooked the risotto slowly in a mix of Murphy-Goode Chard (yeahhh) and water since I was out of chicken stock. Then, I threw in two spoonfuls of creamy herbed goat cheese, lemon zest, sea salt and freshly ground pepper. And then for the grand finale, I topped it all off with…….an egg?

Don’t gag, it actually went amazingly well together! I cooked the egg so the white was set but the yolk was still runny and the combo of the soft rice and the runny yolk was comfort food at its finest. I actually felt like I was in a tiny bistro in Paris and enjoyed a glass of Chardonnay with my meal. The lemon zest made the risotto *pop* and I highly recommend the addition. Overall, the whole meal was uniquely stellar and I will definitely re-create this in the future!
I ate while watching Ange in her super cute “vlog” last night (yes, I’m behind in google reader…again..sigh)

The obvious—

And then I went to bed.
This morning I woke up feeling a lot better about everything and very excited to try a new breakfast I have seen floating around on the blogworld for months now. It involves two things that I love!

Yep, I finally got around to making my oatmeal in the almond butter jar!! There was the right amount of almond butter left and so separately I cooked the oats on the stove in vanilla soymilk, cinnamon and sea salt, then I added blueberries and poured the hot oats into the jar. OMG!!!

It was magical.
And now, for your viewing pleasure, Adam’s remix. He’s disgustingly talented, no?!

Nothing better than oats in a jar.
I had oats w/ almond butter and blueberries this morning, too, but no jar for me.
Glad you had a nice, relaxing night! Everyone needs a break every once in a while. In fact, I took the day off of physical activity yesterday to take a little break myself!
SOOOOOOOOO jealous of that AB Jar Oatmeal. I have been dying to do that!!!!! SO yummy!
Hope today is great for you, Jenna!
i’ve been wanting to try oats in an almond butta jar!! YUM!! I’m not a runny yolk person so sorry your dinner made my tummy cringe a bit! But I do love your cute cute jammies!! they look comfy.
Glad you are feeling better!
I love over easy eggs on top of savory oatbran, I’ll have to try it with risotto!
Risotta with a runny egg on top sounds divine.
er…make that risotto
ahh so many things in this post that I love
1. poisonwood bible (SO good! I made my mom & step dad read it when I finished it!)
2. risotto (need to get some white wine to make it again!!)
3. those cookies. totally bring back childhood memories of reaching into the freezer for one of those. oh man. perfect chocolate to cookie ratio.
glad all is becoming right in your world again
sometimes we just need a moment to breeeeattthh
I love the idea of risotto and an egg on top! Risotto is SO fun to make, dinner guests are always impressed, and I love how it is so versatile – you can throw in whatever ingredients you have lying around but no matter what it always ends up tasting great!
that video is amazingly disgusting. he has some really cute shots of you on it!
glad you’re feeling better.
mmm… now i’m thinking of all of these random egg combinations. for some reason egg/avocado sandwich sounds delicious. something new to try for sure!
If you like Risotto with lemon zest, you should try making the risotto that way, then wrapping it and a little mozarella inside blanched swiss chard leaves. You put the wraps in a pan with some chicken broth, then bake at 350 until the cheese melts. (maybe 20 minutes?) (Inspired by this Mark Bittman Recipe http://video.nytimes.com/video/2008/05/27/dining/1194817113256/chard-stuffed-with-risotto.html)
Actually, that was a video demo- here’s the actual recipe. http://www.nytimes.com/2008/08/06/dining/064mrex.html?ref=dining
I’m glad things have settled down for ya Jenna!
i occasionally top my oats with an egg, but I’ve never thought to do it with risotto! I’m sure it would be delish!

Mmm, savory egg + creamy risotto sounds divine! I can definitely picture that meal being served in a french bistro. I’d like a glass of wine right about now…
Oat question. What kind or brand of oats do you use?
Thanks!
The Poisonwood Bible is a fantastic book — I hope you’ve also read her Animal, Vegetable, Miracle which, along with An Omnivore’s Dilemma, really changed the way I see food. Highly recommended.
Ha, I think I’ve been eating more nut butter lately just so I can have more oats in a jar! SO GOOD!!
Haha, yes Adam is a genius!
Wow, that risotto meal does sound disgusting…disgustingly amazing! The egg on top really does sound delicious!
Ah, the classic oats in a jar
Is it just me, or does that Risotto look like grits? Maybe it’s just my southern roots talkin’
Thank you for posting your egg and risotto mix. I made some risotto yesterday afternoon and have some left and was trying to come up with something else to do with it other than pairing it with meat – and eggs sound like they would be so yummy!
Love those pajama pants!
So glad you had a nice nite “off”
Glad you got some rest and relaxation you needed.
I love the combo of egg on stuff like that. Its a nice creamy, gooey yumminess we all need sometimes. To me that is comfort food.
Books+cheese+oatsinajar= heaveninapost. Have a good day love!
Why won’t one of my nut butters run out so I can make nut butter oats!? I’m so jealous of everyone who’s been getting to do this!!

I love making risotto! You’re forced to just chill out and stir.
Risotto+Egg=Yum

Wow, Adam is amazing that video great!
Thanks, Ariel!
The risotto looks and sounds amazing. I’m glad to know the trick about using wine and water if you don’t have stock. I usually have wine – but not always stock in the pantry. I wonder what that says about me.
whoa, i had that EXACT breakfast this morning using that EXACT brand of almond butter. too…weird…
you’ve discovered the magic of oats in a jar! mmmm, so good! just out of curiosity, what’s the tattoo on your foot?
Good for you for taking a much needed rest. Hope all is well!
I put poached eggs on my rice stir-fries.
Hey~
I am glad you got a breather last night- how is Ryan? I haven’t heard you mention him as you had been for a while- is he still on the scene?
also- I do realize that you two live together, but it doen’t mean you HAVE to do or be anything- just wondering since you talk so openly about things
I think that egg on the risotto looks magnificent! I woulda had to have a burnt slice of toast and butter on the side too, but wow, girl, brillz! Glad you took a breather last night. We all need them.
OMG I LOVE THE POISONWOOD BIBLE. Actually, I love Barbara Kingsolver in general..I did my senior thesis on her books!
Also, I found those cookies at Target today for a good price!
Risotto and eggs sound amazing together! Anything with a runny yolk is good
ALMOST as GOODE as that video!!! He is incredible!!!
The bright yellow color of the egg yolk against your snow white risotto is beau-ti-FULL!!! I don’t see how anyone could ‘gag’ from your meal – looks awesome. But then again, all your meals look great
Are you reading The Poisonwood Bible?? Barbara Kingsolver is my absolute favorite author! If you haven’t read Animal, Vegetable, Miracle go buy it right now. It is non-fiction and all about eating natural, local foods. I loved it. All of her other fiction novels are amazing also!
GREAT GREAT GREAT video! Thanks for sharing….Amanda C
Dang Adam’s remix is amazing. It seems like you all had so much fun!!
