Hi guys!
Thank you so much for the little break last night. I really needed it! I know I am pretty personal on the blog but of course there are things going on in my life that I can’t share with the entire world wide web, but be assured all is fine! Everyone needs a little rest sometimes. I took some time to catch up on my reading materials—

Last night I also made an interesting, and surprisingly gourmet, little dinner for myself. Risotto has been on my mind since I made mushroom risotto for 22 people last week (was that only last week?!) and so tonight I did a little re-make, just for myself.

No recipe, really, just a hodge-podge of stuff I had laying around the house. I cooked the risotto slowly in a mix of Murphy-Goode Chard (yeahhh) and water since I was out of chicken stock. Then, I threw in two spoonfuls of creamy herbed goat cheese, lemon zest, sea salt and freshly ground pepper. And then for the grand finale, I topped it all off with…….an egg?


Don’t gag, it actually went amazingly well together! I cooked the egg so the white was set but the yolk was still runny and the combo of the soft rice and the runny yolk was comfort food at its finest. I actually felt like I was in a tiny bistro in Paris and enjoyed a glass of Chardonnay with my meal. The lemon zest made the risotto *pop* and I highly recommend the addition. Overall, the whole meal was uniquely stellar and I will definitely re-create this in the future!

And then I went to bed.
This morning I woke up feeling a lot better about everything and very excited to try a new breakfast I have seen floating around on the blogworld for months now. It involves two things that I love!

Yep, I finally got around to making my oatmeal in the almond butter jar!! There was the right amount of almond butter left and so separately I cooked the oats on the stove in vanilla soymilk, cinnamon and sea salt, then I added blueberries and poured the hot oats into the jar. OMG!!!
It was magical.

July 30, 2009 at 9:14 amI love the idea of risotto and an egg on top! Risotto is SO fun to make, dinner guests are always impressed, and I love how it is so versatile – you can throw in whatever ingredients you have lying around but no matter what it always ends up tasting great!

July 30, 2009 at 9:32 amIf you like Risotto with lemon zest, you should try making the risotto that way, then wrapping it and a little mozarella inside blanched swiss chard leaves. You put the wraps in a pan with some chicken broth, then bake at 350 until the cheese melts. (maybe 20 minutes?) It is non-fiction and all about eating natural, local foods. I loved it. All of her other fiction novels are amazing also!
