You wanna know the best way to eat kale?
Cooked in bacon grease then tossed with hot spaghetti, garlic, brie cheese and bacon crumbles.
The brie cheese melts and forms a deliciously creamy sauce that coats each strand of spaghetti. It’s been rocking my world for two days straight (its great reheated!) so it’s high-time I share it with y’all.
Since I’ve done absolutely nothing but sit on my butt for the past three and a half weeks, right about now I’m probably collapsing in my own sweat on my yoga mat at the Yoga Journal Conference. A large group from my studio is going to practice with Baron Baptiste for the day. It’s going to hurt…bad.
I’m going to need triple portions of this ready tonight when I get home. And more of these.

January 13, 2012 at 3:55 amBrie that’s perfectly melted and incorporated all over the kale and pasta…oh, yes. I think anyone who says they “don’t like kale” would have to adore it when it’s coated in brie. That would be the icing on the cake for me!
I love kale anyway but with brie..oh yeah.

January 13, 2012 at 4:54 amI am a kale-o-holic. I don’t know why it took me so long to figure out how amazing it is, but now I just can’t get it enough! I like it baked, raw, in smoothies, in salads with a little bragg’s, red onion and carrot… but I’ve never even thought to have it in pasta. It seems like a great way to bulk up a smaller portion of pasta and not feel like you’re missing out on anything.

January 13, 2012 at 6:29 amMy father in law grows it I have fallen in love with it! I have it frozen in the freezer all cut up and ready to go. I read that freezing it brings out more flavor. We shall see the next time I make it. I did a recipe with Kale, Penna Pasta and Italian Ground Sausage. It was fantastic! I will give yours a whirl too!

Kale and pasta with sausage (literally, just those 3 ingredients, plus some red pepper flakes for pizazz) is my go-to dinner, and this was along the same lines, but so decadent with the bacon and brie! Kale and bacon/sausage seem to be a match made in heaven…..
