Sweet Smokin’ Hot Mango-Chipotle Guacamole {GIVEAWAY}

Wow, you guys, I am SO excited about this recipe and giveaway post today!!

You see, my friend Lori’s cookbook came out yesterday {squeal!!!} and it’s chock full of absolutely amazing sounding recipes. Sweet chili pulled pork? Pan fried lemon-garlic rib eye steaks?? Avocado-topped hot dogs with creamy chipotle sauce??? Are you dying yet? Me too.

Needless to say, it was almost impossible to pick a single recipe out of the book to share with y’all today, but I did my best. And guys? You won’t be disappointed. Let’s just say this is the best guacamole I’ve ever tasted. Adam said “it’s the best thing I’ve ever put in my mouth”. Bold statement — true fact. It’s sweet, spicy and creamy…you’ll want to eat it by the spoonful. I dare you not to!

This is NOT your average guacamole! There’s mango chunks, chipotle peppers, fresh salsa, sour cream and bacon crumbles in this. I really wish I would have thought to make this for my Noonday party the other night! It definitely would have been a hit. Plus, it only took about 10 minutes to throw together. All that to say that this was definitely not the last time I’ll be making this amazing dip!

Sweet Smokin’ Hot Mango-Chipotle Guacamole

makes about 2 cups

from The Recipe Girl Cookbook

Ingredients:

2 medium avocados, perfectly ripe

1/2 medium lime

2 tbsp sour cream

1 tsp chopped canned chipotle pepper in adobo sauce, seeds removed + 1/2 tsp sauce from the can

3/4 cup chopped mango

3 slices bacon, cooked until crisp, crumbled and divided

3 tbsp fresh salsa

salt and pepper to taste

tortilla chips for serving

Directions:

In a medium bowl, mash the avocado roughly with a fork, leaving some chunks. Squeeze the juice from 1/4 of the lime on top. Add the sour cream and chipotle peppers and sauce. Stir gently until combined. Mix in 1/2 cup of the mango, 2 slices of the crumbled bacon and the salsa. Add salt and pepper to taste. Drizzle the guacamole with the juice of the remaining lime. Sprinkle with the remaining crumbled bacon and mango.

Serve immediately (or soon) with tortilla chips and/or jicama slices. If you need to store the guacamole for an hour or so before serving, place a piece of plastic wrap on top so that the plastic wrap is touching the guacamole. This will prevent air from getting in and turning your guacamole brown.

    Avocados are a new passion of mine if that makes sense. I love food. All food. Okay, most food – meaning avocados were never high on my yum list. UNTIL NOW. Holy moly I can’t get enough and my roommates don’t understand my obsession with all things sweet/spicy or sweet/sour or salty/sweet. ALL OF IT. That being said this recipe is perfect. But to be honest I think it’s that beyond gorgeous blender that truly made me fall in love. I can’t help it I am a sucker for kitchen appliances – If I could bring my mini food processor, panini maker and nutribullet with me everywhere I would. But I am lacking in the blender department. Everything about this post is beautiful! Can’t wait to make this 🙂

    This looks fantastic! I traveled abroad on an immersion trip to Tanzania a few years ago and got to enjoy fresh, delicious mangoes almost every day for breakfast…and I have been looking for great recipes that include mangoes ever since I came back!     I never would have thought to add chipotle pepper to guacamole. I bet the smokiness goes really well with the mango. About how much of the pepper did you use to get the 1 tsp chopped that the recipe requires? What did you do with the rest?

    This recipe sounds awesome! I love guacamole, but always make it really basic with red onions, garlic, cilantro, lime and chopped tomato. But this sounds like a real indulgence that would last about 2 minutes around my family 🙂 The blender sounds awesome, as well…my blender is very cheap, and does not blend very well.     I can’t wait to try this recipe! I usually make a very simple and “purist” version of guacamole but this recipe has enticed me to try something new. The last few weeks we’ve been picking recipes from your site to try and have a great time cooking and eating together! Thanks so much! Your blog title caught my attention because I’m a runner, too, so I appreciate all your healthy recipes (many of which I’ve tried on my own that are “too healthy” for my boyfriend, lol!).     Looks amazing! The restaurant where I work has an avocado mango salad that looks similar to this guac (minus the bacon) and they serve it with grilled shrimp. It’s soooo good!

    LOVE guac! My boyfriend let me in on a secret and we tried it a few weeks ago – if you leave the pit from the avocado in your guac, it will stop it from turning brown! It worked!
