Tofu + Bread = Heaven.
I don’t know why it never dawned on me to combine the two before!! I’m glad I did now because I’m sure it will be a regular addition to my weeknight dinners. Tonight I made Blackened Tofu Sandwiches with Spinach, Radishes and Spicy Mustard.
My friend, Chef Erin, is actually a real chef at a bakery during the day and sometimes she brings to school her day old goodies that are extra. Last night she brought in some delicious bread that was just baked the day before (hardly stale!). As you can see in the picture I taste-tested it last night by ripping off the top ;).
So, tonight, I made the Blackened Tofu recipe from ED&BV (I don’t measure anything anymore—I just find all the spices in my cabinet that seem to go together and dump it on the tofu then saute in a tiny bit of olive oil in my cast iron) and used it to make one helluva sammie with the homemade bread. I toasted the bread, layered on some spicy mustard, spinach and thinly sliced radish (this worked well actually!) and I had myself a darn tasty meal. I also had a peach and some blackberries on the side.
Yum!!!!!
I’m off to school armed with a super charge me cookie for energy into the night!
ps- today at lunch I was so starving that I ate my snack (pretzels and walnuts) with my lunch. For a snack later, I ate a Quaker Simply Natural granola bar that had been sitting in my purse for way too long…. I also had a chocolate truffle that the pastry chef gave me to try 😉
