You know what I am a huge fan of? Other than cat paws, black licorice and buttered popcorn jelly beans?
That ginger dressing at Thai restaurants. You know the one! Most often it’s the house dressing and is slightly sweet and also kinda spicy at the same time? Yeahhhhh that one. I am absolutely addicted to it.
Lately, I’ve been inspired to start making my own salad dressings, and this fresh ginger one has been my favorite so far.
It’s a snap to make, extremely tasty on raw kale and has the perfect amount of sweetness reminiscent to the version at my favorite Thai place.
Trust me guys, this will be your new summer salad dressing, perfect on everything from kale to thick slices of juicy tomato. A caprese salad with ginger dressing instead of balsamic vinegar? Well yes! I think I will.

I am fixing to make a raw kale salad with the baby dinosaur kale I picked up at the farmer’s market…..along side your classic margarita pizza with mushrooms & goat cheese (also from the farmer’s market). I convinced the hubby to have one completely meat free dinner a week, he kindly agreed. So it’s my mission now to have the most amazing meatless meals….that he can’t help but want more! June 21, 2012 at 6:09 amlove ginger dressing, the best i’ve had is at this little japanese place called toni’s on miami beach. it’s absolutely addictive and you can order entree sized house salads which i pretty much always end up doing. delicious!! till to this day nothing compares! i will have to try this.

I love ginger so this sounds perfect for a light dressing for summer salads.

I’ve made one with minced onion and ketchup added to the rest of the same or similar ingredients…that’s how it gets so thick and pink…But I’ll give this one a try too!

Give me a wide mouth Mason jar and my immersion blender and I am set! There is one I make from a book I read (mystery series with the main character as a caterer in CO!) called Love Potion salad dressing. YUM!
