Monday, monday…this morning I ate a big bowl of peanut butter scottish oats that I made on the stove last night…I put a banana in it and 1 tbsp of my honey roasted peanut butter and had a cup of English Breakfast tea on the side. Yum! Today is bread day at school….I will be coming home with TONS of freshly baked bread and I am so excited to make a sandwich with it for lunch today!! Stay tuned 🙂

January 14, 2008 at 3:02 pmJenna all the food you make looks so amazing! You have inspired me to try to make a spinach quiche. My recipe says to squeeze dry the spinach. How am I supposed to do this? Typically I cook the frozen spinach first then use paper towels, but I use like a gazillion towels. Am I doing this right?
p.s. Your post title is correct, I am so jealous of your ice-cream! I wonder if they use gelatin or something to make the milk not get icy. Since its so low cal and there are no artifical sugars they can’t be using much real sugar to prevent it from becoming icy?

Oh well, I’m off to a good start with a long run this morning in the 30 degree St. Louis weather. Now time for some breakfast and off to two hours of spanish class. Unfourtanetly this talent isn’t genetic, and I don’t quite have the nack for making it. Maybe I’ll give the rolls you had made a while back a try, and hope for the best…:) Any good bread cookbook recommendations for beginners?

January 14, 2008 at 4:04 pmLast night I made ww dough to make pizza with at a later date, and since I didn’t want to use it right away I thought I would just freeze it. I wrapped up little balls in plastic wrap and put them in the freezer, but when I went and opened it an hour later all the dough was bursting out of its wrap? Any idea why this happened? I let is rise for a full hour before putting it in the freezer….dough has a life of its own sometimes!

And I’m STILL full, when normally right now I’d already be having my midmorning tea or other snack. 🙂 I also made the day-of oatmeal this weekend (that was me posting in the recipe section) and it came out great! It was my first time making real, non-microwavable oatmeal so I was proud of myself 😉

I workout about an hour to an hour and half per day, 5-6 times a week. i have included the link to my blog so you can get an idea of what i eat, http://abetterfit.blogspot.com/ I don’t want to deprive myself but i also want to continue losing. Whenever I use frozen spinach I always defrost it in the microwave (not cook it, just defrost it. it will still be cold) then I put it in a strainer and press out the water with my hands into the sink. I think that’s the easiest, earth-friendliest way 🙂
To make super creamy fro yo and ice cream you really dont need gelatin…just skim milk and a good ice cream maker. The ice cream maker ensures that it won’t be icy and the milk is creamy.

I have to say, that has never happened to me! But, I’ve never frozen straight dough before. I would let it rest in the fridge for a couple hours before putting it in the freezer to ensure this doesn’t happen again! Strange!

I grind my own at the health food store! i’ve finally found a place that has organic honey roasted peanuts you grind yourself. Its wonderful and about 85 cal/tbsp

I want to help but it’s SO hard for me to give you an exact calorie estimate for you without meeting with you in person. You say you are looking to lose weight? I would limit your calories to about 1700-1800 if you are trying to lose weight…don’t go lower than that though because you are quite active. Again, its impossible to get a truly accurate number when I’m just reading your stats off the computer…if you go visit an RD in your area they could take your measurements and give you more advice of what to eat and how much. Sorry if that wasn’t much help!!!
