Good Morning!
Well, I made it through the night last night by myself….only waking up a couple times. I can’t believe a week has gone by since the accident…..I feel like I lost a week of my life; everything has been in such a fog. However, today is one of the best days of the year so we all must celebrate accordingly……DERBY DAY!
I know we have spent last year’s Derby Day together, but I wanted to reiterate how much the Kentucky Derby means to my family. My entire dad’s side of the family went to school at University of Kentucky and my uncle still lives in Lexington and is very in on the horse business. My grandpa actually used to breed racehorses!
This year Derby Day is a much more solemn affair than it has ever been in the past but a few days ago, up in Lexington, my uncle and some old college buddies bid on a horse for John at an auction party. The horse’s name is Regal Ransom and he is not a favorite by any means, but if he DOES win, my family will receive about $7,000 straight to the John T. Weber Memorial Fund. How amazing would that be?! So we all have to cheer for Regal Ransom this evening……I know I will be!!!!
Anyways, this morning I was so excited to share my breakfast with you because it was something different than I normally eat and it was sooooooo delicious:
I toasted two HempPlus waffles and layered them in plain Chobani, 1/2 banana, raw almond butter and a little raspberry preserves. Oh my goodness, was this ever amazing. I never tried the greek yogurt on waffles combo because normally I really don’t care for the “hot-cold” combination. I didn’t think cold yogurt would be good on hot, crispy waffles but boy…was I wrong! The yogurt was thick and tangy and was thick enough to not run all over the waffles and instead sat perfectly like clouds. It also boosted the protein content of this breakfast way up. I will definitely be recreating this in the future!
It was also incredibly filling; perfect fuel for the power yoga class I’m attending later this morning.
I’m going to my parent’s house now to say goodbye to my aunt, who is flying back up to Wisconsin this morning. She’s the last family member to leave so the house is going to be really quiet now. Which is why I’m going to keep my mom busy by treating her to a manicure. She says she’s not ready for yoga yet but I need it.
Say a prayer for Ryan, fishing on Team Johnny Weber right now!!! John has a pretty busy weekend going on between the fishing tournament and the Derby. I wonder where he is right now.

May 2, 2009 at 7:29 amI live in Lexington and used to go to Keeneland every year on Derby Day (haven’t gotten the chance to go to Churchill Downs…yet!) with my grandpa. He’d get us a room inside and we’d have a free buffet and drinks all day while betting on the horses. It was always alot of fun.
My grandpa passed away a few years ago so I haven’t been to watch the Derby there since then but because of it, Derby Day holds a special place in my heart as well.
I will definitely be rooting for Regal Ransom today….and Team Johnny Weber. 🙂

By the way, I am very into the horse business up here in Lexington. I had always wondered what your ties were. Kentucky is a great place!

It’s a normal stage of the grief process, but it’s hard for your heart. So I’m very glad you’re in grief counseling, and that you have so many lovely people close by you. I assure you, John is all around you. My grandmother passed about five years ago, and every couple months, my family will randomly smell her very unique perfume in places it would be *impossible* for anyone else to have caused it (i.e., in my own empty car, etc.) Seriously! Look for the signs. Jenna, he’s there 🙂
