Good morning!
Again, it looks like it should be cool, crisp weather outside…..but it’s still very humid and hot! Sad, sad, sad….one thing I loved about living in such places as North Carolina and Alabama was that the leaves would change colors when school started. I miss that here!
However, I did prepare another fall-ish breakfast!
I’ve always just put straight pumpkin in my oats, never trying actual pumpkin pie mix before. Wow, this stuff was YUMMY! Yeah, it had a bit of cane sugar in it (as well as lots of spices!), but was totally worth it. A lot of times I find regular pumpkin to have a funny taste when there’s no sweetener involved…..this, on the other hand, tasted like pure pumpkin pie in a can. Perfection! I mixed 1/4 cup of it in with my oat bran and topped it with blueberries and raw almond butter. Delicious!
I have a few freelance deadlines that I have to work on this morning, as well as running a some errands with my mom. We are donating a TON of books to my brother’s high school library so we have to head over there this morning and make a big drop off. I love seeing those kids sweet faces and saying hi to my brother’s teachers—it always puts a smile on my face.

So, I’ve had a few emails and comments asking about The Way (my Wednesday night bible study). Here’s the lowdown. We are using a book called “Prayer” by Sarah Arthur. Its totally easy to understand because its written for young adults. š Basically what we do is one person will volunteer to lead the study for the week and we will go through a chapter in the book. The leader will discuss the key elements of the chapter and we all will discuss points in it and how it is relevant to our own lives. We don’t really use the bible…it’s more of a discussion thing. For the final 30 minutes, we will go around in a circle and each say our “highs and lows” for the past two weeks and then we will close in prayer. Its a little different than past studies I have done because we don’t analyze parts of the bible or even have set questions. We might refer to the bible a couple times, but focus more on deep discussion of prayer in our own lives and how we can take our prayer life to the next level. I try to wait until the end of september or the beginning of October because once I start with the pumpkin business.. it DOESN’T stop!!! Pumpkin EVERYTHING- Pumpkin spiced latte’s, pumpkin bread, pumpkin muffins, pumpkin scones, pumpkin pie… ok so I guess I really enjoy it OUT of it’s healthy vegetable form! Girls gotta splurge sometime though, right! Also, I really really like zucchini, not sure if that is categorized as fall/winter though!!

I have to say that my new favorite Fall food is a sweet squash I’m trying to grow this year for the first time: delicata. Its like a mix between a sweet potato/acorn squash??? None of mine are actually finished growing yet, but I was able to get one at the Farmer’s Market last year and just knew I wanted to try growing it myself (we’ll see, this was really my first garden growing experiment and the summer squashes were radiant all season, so hopefully my delicata squash, sweet dumpling squashes, and spaghetti squashes will all work out as well).

My favorite fall/winter veggies are SWEET POTATOES! They’re amazing all by themselves, with a little butter and brown sugar, or in various other combinations. There is nothing better than pulling a sweet potato out of the oven and seeing the sugary juices oozing onto the pan… mmmmm…

During the last five minutes, I sprinkle them with fresh garlic, parsley and parmigiano reggiano…Oh and I put the broiler on to finish them-gives them the perfect “crispiness”. The bible study sounds incredible! We are kicking up a new prayer group at the middle of the month called ACTS. I’m looking forward to sitting down with all the women at my church.
I have to say, I’m loving that you are doing such a big donation to your brother’s school. Not only are you helping so many others, the memory of your brother doesn’t disappear either. Have you contemplated a non-profit in his honor? (Maybe that is one of those q’s I should ask via email!!)
I hope your foot is healing well. I’m still struggling with a broken toe and have felt so lethargic the last month not being near as active as I normally am. If only I didn’t need my toe for balance, I might be good again.
Fall is such an amazing time. Wyoming’s fall is so short, but breath-taking. The leaves in the mountains quickly change colors and begin to fall towards the ground, crisp air greets each morning and the sunsets reflect all the amazing colors life has to offer. This season is by far my favorite time.
We live close to one of the greatest areas for corn fields. The fun with that during fall are all of the corn mazes. We can drive twenty minutes and have our choice of which maze to venture through – and right along side of that, we can pick our holiday pumpkins right off the vine. There’s nothing more fabulous than fresh – and I do mean fresh pumpkin for pie, muffins and cookies too! Pumpkin is my favorite too!

September 3, 2009 at 9:42 amSweet potatoes! I love this time of year (er, well when it feels more like fall here in Florida) because I like to make this easy dish, which is SO fall, without being heavy:
– sweet potatoes
– carrots
(find your preferred proportions, start with equal parts, maybe more heavy on the sweet potatoes)
– dash of lemon
– (experiment with cinnamon or other spices if you like!)
— boil until skins come off easily, and remove skins from all vegetables (be careful, veggies are HOT!)
— put all veggies in a big mixing bowl and mash them up together
— when you have an even consistency and blend, add the lemon to taste, and whatever other flavorings you like (it’s really good with just the lemon though)

Paired with spelt flour, applesauce and cinnamon, butternut squash is delicious in muffins and breads for a healthy kick! So, whether it’s a sweet tooth or a savory one, butternut squash can cure them all in so many different ways. Squash alone is divine, but my favorite is a gathering of all the vegetables from the fall farmer’s market: asparagus, squashes of all kinds, sweet potatoes, brussel sprouts, broccoli, onionsāsprinkled with olive oil & roasted ’til nice and crispy….aaaahhhhh, healthy goodness!

And I can’t wait to go camping and see some leaves change! That is one of the things I miss since moving to Florida as well! I try to eat more veggies for my health! I make my own vegan Pumpkin Spice Lattes with my blender (YES, I put pumpkin puree in it!), pumpkin pie squares, pumpkin oats, pumpkin smoothies…..lets just say that when this season comes around, I REALLY get my daily dose of Vitamin A.

My fall favorites are butternut squash (pureed in butternut squash soup, or roasted in cubes and tossed with quinoa) and apples! I can’t get enough of apple picking season… apple pie, apple blueberry crumble, apple brownies, apple cinnamon oatmeal, homemade applesauce, crepes with carmelized apples… mmm, mmm, mmm.

They are ssoo delicious and versatile: mix them w/ butternut squash and sweet potatoes and roast…or you can whip them til they’re fluffy, yet smooth, kind of like mashed potatoes, but soo much more flavourful.

My fave fall veggie is sweet potatoes. I love them all kinds of ways (roasted, mashed, mixed roasted root vegetable, fries, fried, tempura, you name it and I’ll most likely love it. Here’s a way that you may not have heard of : using sweet potatoes to make a soup sweetened with cane sugar with lots of ginger and tapioca pearls (It’s a Chinese dessert soup). It’s yummy!

I love to chop them up and bake them alongside chicken and apples or just wrap in foil and make a giant baked potato for dinner. And of course it’s not Thanksgiving without sweet potato casserole and sweet potato pie. Just typing it makes me hungry :).

You can do so much with them – make a creamy potato leek soup with grated cheese and chives on top; saute and add them to pasta (really good with pesto sauce); throw them in a stir-fry. You can even chop them up and eat them raw on top of a salad. They add so much flavor and are low in calories, relatively cheap, and easy to work with. Plus, something about using them makes me feel like I’m a gourmet chef!

I think my favorite fall/winter veggie is BEETS!! If those count…we’ve been getting them in the summer in our CSA. I can’t believe how sweet they are. Yum!

My favorite has to be pumpkin ~before going raw food vegan I used to make this concoction of canned pure pumpkin/cottage cheese/peanut butter/cinnamon/drizzle real maple syrup/dash filtered water to blend till creamy…topped off with Cinnamon Puffins cereal! =)

I know that isn’t a normal one but canned veggies were plunked in front of me as a kid (always french cut string beans!) and I just never warmed up to making better ones when I grew up. My idea of cooking involves something from the frozen food aisle and a microwave.
I’m thinking I’d like to try one of those spaggetti squash things but I honestly don’t know where to start. As a kid I liked pumpkins but really for the carving. I really got to make a couple of veggie friends.
I honestly get near 100 percent of my veggie intake off v-8 (and veggie burgers if you count them)
so I’m glad to bump into your site. Maybe I can ease myself into more dynamic food choices that are healthy as I try to become more fit… 20 pounds gone so far!

Another favorite is pumpkin but not the meat the seed! I love roasting them and sprinkling them with a little cinnamon or old bay!!!

September 3, 2009 at 7:40 pmDo I have to pick just one? There is simply no way. I eat them all year. There is nothing better than the combo of sweet potatoes and veggie burgers. I could eat that meal every single day. Pumpkin oatmeal is simply divine too. So tasty, so yummy, so satisfying.
I also checked the cookbook and I think it would be a book I would love to have in my pantry. I am gluten/dairy free and from the looks of it most of her recipes are. I am always on the hunt for a good gf/df cookbook.

I recently moved from WI to Tampa and my body is sensing/craving the fall season but itās crazy that its 90 outside! My absolute favorite fall veggie is pumpkin, I actually get bummed out when they are not in season and Iām forced to use canned. However, I do have my go to recipe that I wanted to share because it brings me back to the change of seasons and itās a mix of gingerbread and pumpkin- what else is better?
Pumpkin Pecan Chocolate Chip Gingerbread (Inspired by Post Punk Kitchen)
Ingredients
1 cup chopped pecans
3 1/2 cups all-purpose flour
2 cups packed dark brown sugar
2/3 cup white sugar
2 teaspoons baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
2 teaspoons ground ginger
2 cups pumpkin puree
1 cup vegetable oil
2/3 cup coconut milk
2/3 cup flaked coconut
1 cup miniature chocolate chips
Directions
1. Preheat oven to 350 degrees F. Grease and flour two 8? x 4? loaf pans.
2. Spread pecans in a single layer on an ungreased baking sheet. Toast in the preheated oven for 8 to 10 minutes or until lightly browned. Set aside to cool.
3. In a large bowl, stir together the flour, brown sugar, white sugar, baking soda, salt, cinnamon, and ginger. Add the pumpkin puree, oil, and coconut milk, and mix until all of the flour is absorbed. Fold in the flaked coconut, chocolate chips, and toasted pecans. Divide the batter evenly between the prepared pans.
4. Bake for 1 hour and 15 minutes in the preheated oven or until a toothpick inserted in the center comes out clean.

Plus my mom makes it the best as all moms do. 20 minutes in the microwave in 1 inch of water in a dish and then baked 20 minutes in the oven. Yum!
