Hi everyone—Happy Thursday!
Some beauties I made at work today:
Yes, it would appear I am moving over from being the bread girl to being the vegan cupcake girl! The top are just chocolate with vegan buttercream and “oreos”, and the bottom are vanilla with chocolate buttercream and sprinkles. We all agreed that the chocolate cupcakes are MUCH better than the vanilla so I have to work a bit on a new recipe. They still look pretty though, right?? I think I ate my weight in chocolate buttercream today. 😉
Buttercream wasn’t ALL I ate today though! I tried a new bar at 3:45 this morning—
This has been sitting on my dresser since LAST SUMMER! I finally gave it a go today and I’m glad I did! I really liked it and will definitely buy it again. It tasted sort of like a “grainy, crumbly nutri-grain bar” (in a good way) and it was very satisfying. I do wish it had more protein in it (it has 6 grams) because I find that I do better in the early morning when I have had a snack with some protein like yogurt or hard boiled eggs. However, this did keep me going until 8:00 when I broke for breakfast so it isn’t too shabby!
Breakfast was a big bowl of oats (3/4 cup made with 1 cup skim) with almond butter and agave
And lunch was a big yogurt bowl with 1/2 cup Zoe’s honey almond granola, a sliced banana and a drizzle of agave
I like breakfast foods. Can you tell??! 😉
After my food digests a little I’m going to hit the mat for some power yoga. Very necessary today.

The blueberry kind is amazing! Although if yours was a year old, it might’ve been a little different; the ones I have say “New & Improved” on the box.
