Back From Sea

Well, Ryan and I are back from our day on the high sea! We hooked a few BIG fish but they broke the line every time. It was still fun though and totally gorgeous outside!

We brought along a humongous bag of grapies to snack on—

(which I snacked on liberally all day long!)

And, for lunch, I brought a monster sized salad of organic greens & strawberries with honey lime dressing (from Greenwise) as well as my favorite flavor of Clif Bar

I know I just said yesterday how I hate to replace meals with bars….but I feel like I actually got a pretty balanced meal out of this bad boy because I combined it with a huge fresh organic salad and fresh fruit! This is when Meatless in March is hard for me because I totally would have just picked up a turkey sub to bring on the boat today! I knew that a veggie sub would NOT fill me up AT ALL (I need more protein than just veggies + bread) and so this was the next best option. Surprisingly, it kept me going all afternoon and I was fine until we just got home at 4:30 and I snacked on a Kashi Go Lean waffle with almond butter—

Yummy gooey almond buttery goodness…for the third time today! Love it!

Tonight we are going out to dinner here with Sarah and her hubby, David. Ryan has been to Square 1 before but I never have. I was pretty hesitant about going to dinner at just a burger joint but then I looked at their menu and freaked out! They have SOOOO many amazing options and I already have my meal all planned out and I’m super excited about it. This is not just any ol’ burger place…check out the menu and see for yourself! What would YOU get?

Yep, I made my first recipe from Ani’s Raw Food Kitchen cookbook and I’m so stoked about it. This would be raw Vanilla Macadamia Nut ice cream!!!!! Holy yum is correct. I made it this morning before we left for the boat in the Vita-Mix and then the ice cream maker….

Basically, I just blended up in the Vita-Mix soaked macadamia nuts, dates, coconut water and one entire vanilla bean (bark and all!). It made a very very creamy “kream” (as Ani calls it) and then I transferred that into the ice cream maker to freeze and it came out beautifully! I have tasted a little and it is heaven. Super creamy and vanilla-y. I wanted to try my hand at the ice creams with thai green coconuts, but I am going to have to wait until the coconut master herself comes to Tampa and helps me whack my first ever. I’m scared and have no idea what to do! Hurry up down here, Gina! 🙂

I’m off to shower and get ready for dinner. A HUGE congrats to Miss Meghann who completed her first ever triathlon today and totally rocked it! I’m so proud of you, Meghann! Wish I could have been there!!

    That restaurant looks so yummy and so healthy for a burger joint! I’m really jealous – I’m no vegetarian, so I’d totally go for a buffalo burger with lots of mustard and caramelized onions! Hope you and Ryan and your friends have a great night!

    That ice cream looks fantastic! I am jealous of your beautiful weather! It is in the 40’s and raining here!

    I agree with you on the veggie subs! I am hungry 10 minutes later! And sub shops don’t have tempeh or tofu to add to them. You should start a shop/cafe like that with your fresh baked goods and vegan/vegetarian options!

    Raw Vanilla Macadamia Nut Ice Cream!?! Oh that sounds amazing! I need to get an ice cream maker pronto. We have one, but it’s a hand crank one and I’m not hand cranking ice cream all by myself that’s for sure!

    Fishing looked super fun. You and Ryan are too cute! Have you tried out the veggie fake turkey slices? They can be tasty in sandwiches and add a bit of a protein boost.
