Breakfast/ Lunch

Case of the Mondays

Hi everyone!

Gah! I have totally got a case of the Mondays today….and its Tuesday! I guess since its my Monday it’s alright. 😉  I fell asleep okay last night around 8:30-ish but sort of tossed and turned and today feel sooooo tired and blah. I guess thats always how it goes the day after a fun weekend!

This morning I ate one of my favorites—

And drank some hot lemon water on route to work. I took yalls advice and packed overnight oats! Sorry for the not so photogenic picture…..it looks like cinnamon oat soup!

It.worked.perfectly!

So here’s exactly what I did:

Last night I combined 3/4th cup oats with 1 cup skim milk and 1/2 cup water, a pinch of salt and a TON of cinnamon. I put it in the fridge then this morning I zapped it for 2 minutes, mixed in my pumpkin seed butta and brown sugar and voila! It rocked. I easily shaved 3 minutes off the cooking process (which is crucial when you only have a 30 minute break!) and there was no explosion, which is always nice. Thank you guys for the advice!!

As usual, that big bowl of oaty delight kept me full for the next 5 hours (this is why I eat the heart healthy portion now!!) and when I got home I reheated quiche for lunch! I seriously had been thinking about the quiche ALL morning at work and how amazing it is. I had some grapes on the side as well—I have been finding it very difficult to get my fruit servings in daily without doing a little combo action with my meals. Oh well.

It was so divine I went back for half of another slice 😉

And then I ate my mom’s crust. Not pictured. Tehe

For dessert I had a piece of dark chocolate–not pictured–sorry! It went into my mouth faster than you could believe.

I’m resting for a bit and then I plan to do some yoga here. I’m trying a Dave Farmar podcast today….I think the class is 1 1/2 hours in length and is Baptiste Power. I’ll let yall know how it goes!

It’s amazing what 3/4 c. of oats can do!

What does the pumpkin seed butter taste like — sweet? savory? I LOVE sunflower seed butter but can’t imagine what pumpkin seed butter would be like!

Yumm! I love the cinnamon roll flavor. Very good.

At school I often use quick cooking oats…only takes about 2 minutes and they are perfecto. I used to be weary of them since I thought that old fashioned were healthier but they have the same nutritional value. I buy them in the bulk bins at a local organic store and they are VERY cheapt too. I got a ton for about $1.

Hope you get some rest. Enjoy your yoga.

So I’m looking into signing up for an online yoga site so I can take classes at home. I want to start practicing regularly (I’m pretty beginner), but my gym only has one class that fits into my schedule. I know you’re a fan of yogadownload.com, but have you ever heard of myyogaonline.com? Why did you choose yogadownload.com over other sites?

Can’t wait to hear about the yoga class. I should try 3/4 cups oats as the 1/2 cup usually doesn’t do it for me no matter what I add to it. Have a good Tuesday night Jenna!

I just did Dave’s 10/29/08 class this morning (60 minutes)! It was fun. It was a pretty simple routine but he makes you work those holds and it was a good workout.

I did the Yoga Download class (90 min.) by Dave and it was awesome. I tried the no fruit with another food and it was way to hard. I can’t eat an apple alone – it makes my stomach all acidic and does not fill me up at all. I can’t live without my apples.

    Hi Jenna,

My mom and I had an ayurvedic consultation this weekend with a respected practitioner in my area My mom is vata-pitta and I am almost a pure vata! I’m a bit overwhelmed by all the food suggestions she gave me – like cut back on raw veggies and beans! I’m strugging with getting in my veggie servings, now. She also told me to bake and peel apples and pears and stew dried fruit such a prunes and to add the spice hing to beans when I cook them because it will aid in digestion. I’m going to try and shift my diet a bit at a time and see if it helps with digestion and calming.

She also recommended the book: The Ayurvedic Cookbook by Amadea Morningstar. I just ordered it from Amazon – so we’ll see how it goes!

    Hope your Tuesday ends well!
