Hey everyone!
I hope yall are having a good Monday….mine has been BUSY! =)
This morning I started my day off with some “chunky monkey oats”Β
This delicious combo consisted of 1/2 cup multigrain cereal made with half silk vanilla and half water and then mixed with a half scoop of chocolate protein, half a banana and a HUGE scoop of almond butter! It was incredibly tasty and filling! I do need to ration my nut butter though because I only have about 2 tbsp left in the jar and can’t get more til this weekend….I’m out of peanut butter also! eek!!! π
About three hours later, I snacked on a coconut cream pie larabar:
And for lunch, had a whole wheat pita topped with a light laughing cow and a big scoop of my kalamata olive sundried tomato hummus:
Along with a honeycrisp apple that was about the size of my head:
I stayed a little late at work today to finish some stuff up and when I got home around 3:30, had a kiwi and a chocolate peanut butter pure protein bar for a pre-gym snackie:

Today work, like I said, was very busy prepping for Thanksgiving. It was rather a quiet day though since we aren’t open for dinner on Monday and I chugged through a super long to-do list all day long.
I sandwiched together 150 macaroons with ganache:
Baked some free form buttermilk biscuits for some chicken pot pies:
Baked 8 carrot cakes—-look at the size of these carrots!!!!! They were about as big as my arm!!!
And also baked 300 mini pumpkin whoopie pies (I didn’t fill them yet though), made some currant scone dough that we froze and will bake off on Thursday and made white chocolate truffle base. It was a jam packed day!
Like I said, I’m headed to the gym in a bit. I’m going to go to BodyPump again! As tortuous as it was last week, I really felt like I got a great workout in….actually a better workout than if I just did strength training on my own because in the class I am forced to KEEP GOING even when I feel like I can’t go on anymore. There’s also no resting in between sets, which makes for a much more challenging workout! When I lift weights on my own I sort of dilly dally around and take breaks, but this class is much more challenging. I would love to make the commitment to go every Monday and Wednesday evening but we will just have to see!

Anyhow, have a good workout! I’m trying to muster up enough motivation to drag my butt to the gym after work. Hard when it gets dark so early!!

Actually, about the gingerbread house, it came down to the very last second and Adam just threw it together the night before and then it was taken to the festival! I didn’t get a chance to take a picture! boo!

I see all these blogs with “pre-workout” snacks – I absolutely cannot eat w/i 2 hours before I work out – preferably 3 or 4 – or I get a terrible cramp/stomach ache. Oy!

Why don’t you come visit me at Quail one of these days?! It’s been way too long! Let’s see….for long road trips I like to make homemade trail mix with almonds, walnuts and dried fruit like apricots and cherries. You should also drink a lot of water (even though that mean stopping and peeing a lot) to keep yourself hydrated. Even though I always want to, I try not to drink more than one caffeinated beverage because it just makes me all wiggy. π I’ll buy a diet dr. pepper and that’s it. I always bring fresh fruit like apples and pears and also small baggies with portioned out cereals.

These were our version of french macaroons. The ingredients only include egg whites, sugar and almond paste. They are yuuuummmmyyy!
