Hi guys!
BodyPump was a lot better tonight. Not that I despised it last week (or else I wouldn’t have gone back!) but it took me one time to get a grasp on what was going on, and tonight I felt a lot more confident with it and knew the weights to use and what was coming ahead. I got there early and warmed up by doing 15 minutes on the elliptical and ended up burning 540 calories between that and the class! Woot!
When I got home, I was starving of course and made acorn squash a la Sammie for dinner 🙂
I baked the squash at 350 for half an hour earlier in the day so all I had to do tonight was just reheat quickly in the microwave and then I topped each half with 1/4th cup whipped cottage cheese and sprinkled it with cinnamon. I also had a cup of my new soup:
It was quite a delicious meal although, I have to admit, I prefer the sweet potato/cottage cheese combo more. All when I was growing up, my mom would bake acorn squash with butter, brown sugar and cinnamon and now it just is impossible for me to it eat a different way. It tastes bland to me without all the fixins’! I think I prefer butternut!
This was a very filling meal and I wasn’t hungry for dessert but my sweet tooth was calling and I couldn’t decide between a macaroon and a SCM cookie so I had half of each!
And wouldn’t you know I sat down to blog then immediately got up, ran back to the kitchen and devoured the other half of the macaroon??!! 🙂 Hehe
I’ve got some some work to do tonight and I’m also trying to pack for my trip home because I need to have the car completely packed on Wednesday night, since on Thursday, I work from 6 am-2 pm then just am immediately driving home!!!! It seems like a long road to get to that point but I just have another 64-ish hours to go! 🙂

I LOVE Amy’s butternut squash soup . . . and steaming yellow squash and adding it to some Moosewood frozen pasta is awesome, too. Glad the class went better tonight! It sounds like a great workout!

The acorn squash looks interesting, I’ve never tried acorn squash before. Is it kind of like butternut squash because thats my fave! Hope your short week flies by!

I preheated the oven to 350, turned it off completely and put the macaroons in for 15 hours. It worked pretty well!

Whatabout a big quinoa pilaf with roasted veggies, cranberries, maybe some beans and toasted pecans? That sounds really good to me plus there is a lot of protein in the quinoa!

Well, everyone’s body is very different so unfortunately there is no one number for everyone. If you want to know exactly, buy a heart rate monitor! I did Body Pump last week with no cardio before and only burned 300 calories. I think they give you 400 as an average but numbers vary among different people.
