Breakfast/ Lunch

Crossing My Fingers

Good Morning!

I’m happy to report that I did sleep last night and probably got about 8 hours. I feel a ton better today! Dexter slept on top of the comforter next to my feet for half the night then I think he moved and slept underneath the bed for the other half of the night so he was happy too.

This morning I had half a banana with almond butter then hit the gym for some cardio (finally!). I did 10 minutes on the treadmill, 10 minutes on the elliptical and 10 minutes on the bike. When I got back I made a smoothie and an Ezekiel english muffin for breakfast. In my smoothie I put about a half cup of blackberries, some peaches, a banana, a cup of soy milk and 2 tbsp of ground flax. It turned out so big that I couldn’t even finish the whole thing!

I was going to make soup last night to take to work today for lunch but I just didn’t have the time or energy so I just made a simple tofurky/spinach/honey mustard sandwich for lunch today. I also packed a pear to go alongside it and, for later, some peanut butter puffins and grapes to snack on.

I’m crossing my fingers that Dexter doesn’t get into anything while I’m at work today! I know I’ll be thinking/worrying about him the whole time and I hope he’s sleeping soundly for most of the day!

I always make waaaay too much smoothie too – I get excited and add too much stuff. I wish it would keep in the fridge but it always separates and gets all gross.

I know what you mean about worrying about your pet when you are at work. Good thing we can close our dogs into our kitchen (its a decent size and they are small dogs) so a little less worry. heh. But before we thought about this idea, they were always in trouble. haha

Ahh I haven’t been keeping up – but I am so so happy you adopted a cat! I have 2 myself that are from shelters, and they are the best. They’re all over my blog… I’m slightly obsessed. I even commissioned a painting of one of them for Christmas. Yikes.

I would recommend getting another one (probably sounds crazy, I know), but they’re so much happier with a friend and less likely to get into trouble when they’re all alone. Plus you can leave for days and not worry about them. Just a thought! My first cat has completely changed since we got our second… and for the better (he was a biter and cried when we left, now he’s completely stopped both).

Funny, I was decided between an english muffin and waffles this morning! Yours looks great.

    Have a great Monday Jenna!

So glad to read that you got enough sleep last night – I sure didn’t, haha. Oh well ;0)

LOVE that smoothie combination – I’m about to go pick some blackberries, actually.

Haha, aww, hopefully Dexter will be a good boy today, while you’re out. Have fun today!! :0)

    Hey everyone!

I posted a few weeks ago about being a new ‘semivegetarian’ and Im interested in buying one of Dreena’s Cookbooks. Does anyone recommend one over the other?

Jenna, Dexter is sooo cute! I’m glad you have someone to keep you company since your roommate had to move away!

This is my first time commenting, but I’ve been reading your blog for a few weeks. I love it! It’s filled with great ideas of how to eat real food!

I’m toying with the idea of becoming vegan.

Your smoothie is a beautiful color of purple.

So happy you finally got some much needed rest last night! It’s amazing how much the quality and quantity of sleep affect our health!

Your smoothie looks absolutely delicious! I make a home-made smoothie out of fresh organic berries and flax nearly every day. I love them!

Keeping my fingers crossed that Dexter stays out of trouble today! Cats are such mischievious creatures!

Does anyone live/ have ever visited Kansas City, Kansas and know of any tasty healthy restaurants? I am going there this summer to visit my aunt and want to make sure I am not missing out on any opportunities for good food!

jenna–i tried tofurky for the first time last friday. i was skeptical–but it was actually quite good, and really filling (esp. with an avocado). i was suprised at how filling 80 cals worth was. it didnt really taste like turkey to me–more like the gyro meat (maybe b/c i had it with a “tzakiki like sauce”…but it is something i could definitely eat for lunch once in a while.

    thanks for the idea!

Good job on the sleep! I always say/think I’m going to get 8 hours, and then never end up actually doing it! It’s so good for you, too!

Man, your lunches always make me excited for my job as I get to pack lunches like those; school is too all-over-the-place to do so. They look so yummy!

I agree about getting another cat. I have two as well. When the second one came, the first was a bit jealous. They quickly became friends, and now they take naps together and chase each other around the house. It is great! One is more of a cuddley cat, and the other is more playful. They compliment each other well!

    Hi Jenna!
I was just reading some of your old posts and I read that you went to Urban Outfitters and got a cute sundress. Is there any way you can take a picture of it? (if that is not too much to ask for) I love that store and i’m going there next week to buy some!
    Thanks in advance

    Michaela,

the cereal is called Barbara’s Puffins. I got the Peanut butter kind. They are available at some grocery stores and most all health food stores! SO good to snack on!!

    Blueberrybabe,

I usually buy Ezekiel Sesame bread. I like it and I like that its frozen because then I don’t have to worry about it going bad any time soon!!

    Christine,
