My Kind of Southern

Well, I’m happy to announce that Dexter seemingly kept himself out of trouble today…now I just hope for the same tonight while I’m at school! He actually got locked in my bedroom away from his food, water and litter box for the most part of the day because some workers had to come into my apartment today to look at the fire alarms and I guess they closed the door on poor Dex! When I got home around 4:15 he was asleep under the bed but immediately ran out to use his litter box and get some food. What a good kitty though to hold his bladder all day!!! I will have to make sure that DOESN’T happen again though!!!!!

Last night when I was baking cookies (I was totally not myself last night…I didn’t even try a cookie after making them!!!) I also made some “Cheater Baked Beans” from Veganomicon. Now, mind you, even though these are “cheater” baked beans, they still took me about an hour and a half to make! Granted, an hour of that time was just spent baking in my cast iron skillet in the oven, but still. Make these when you have some time on your hands. They were pretty darn tasty though!! I’ve actually never made my own baked beans but now I don’t think I could ever go back to the canned kind. This would be the perfect thing to make for a bbq or picnic. I wish I would have made the entire recipe instead of just halving it (recipe said it served 6 so I halved it to serve 3 but really it only serves 2 if you use this for a main dish….). With my baked beans I heated up some previously frozen cornbread I had made last month (I used Lindsay’s recipe and frozen leftovers!), steamed fiesta cauliflower and sauteed spinach. A true Southern delight!

I’m bringing a super-charge-me cookie for dessert later. I made my cookies slightly larger this time so one cookie would fill me up instead of eating 2 small ones always. I think last time my recipe yielded 24 cookies and this time I wound up with 13 I believe. The recipe says it makes 10-11….they must be huge!

Off to school! I really really REALLY hope its not another midnight night….hopefully we will get out by the scheduled time (11:30) or earlier would be nice, too.

    Wow, your dinner looks delicious! BBQ baked beans are my ultimate comfort food, so I’ll have to give the veganomicon recipe a whirl. All this talk of baking really makes me long to get back to my oven, but I just don’t have the time! Anyways, have a wonderful school-night, Jenna!

    aww, Dexter’s had some real adventures lately!

    So glad you enjoyed a nice dinner before heading out to school tonight. I’m keeping my fingers crossed for an early (well, relatively speaking!) release 🙂

    i love southern food so much..and i always feel guilty when i eat big plates of it because its so unhealthy..but this is an idea i was looking for! southern food that is GOOD for your body, not all fried and artery-clogging! it looks great!

    My cat once got closed into the cold room in the basement… we couldn’t figure out where the meowing was coming from! She stays away from there now, although she’s still very curious about everywhere else (even at 13 years old) I guess what I’m saying is that you’re in for lots of little adventures but they make great stories afterwards 😀

    Nice yellow cauliflower! Looks like Dexter is a very good cat! And it sure will happen again, because cats tend to get trapped in rooms and wardrobes and pantries all the time 😉
