Crunching and Twisting

Ahhh sorry for the uber late post! I actually posted this long, elaborate dinner post but something weird happened to the internet and it never went through! I was so disappointed when, at school, I checked the blog from my phone and saw that I was missing my last post!!! Sorry guys! The internet really does not like me 🙁

But…the good news is that I retyped the post! 🙂 So here goes:

I really just cannot give enough praise to YogaDownloads! Today I tried the Yoga Core workout and it was great!! Tons of twisting and crunching and my abs are SURE to be sore tomorrow! After I had my workout, I snacked on 1/2 cup of 2% cottage cheese to re-fuel while I worked on my project…

And dinner! I made one of my favorite pasta dishes ever! This dish combines two of my favorite things: goat cheese and pasta! Is their anything better? Seriously? I used this new Ancient Grain penne that I found at Whole Foods and it turned out really well but a little more dry than usual. I’m not sure if it was the pasta to blame…I’ve made this dish at least a half dozen times and its always turned out really great and moist and tonight the flavor was there but it was on the dry side. I substituted broccoli rabe for broccoli florets and added peas because, well, I love peas. I made enough for two servings are already packaged the other serving up to take to work in the am. 🙂 I did drizzle about 1/2 tsp of oil on the serving for tomorrow though and stirred, hoping that will moisten it up when I reheat it tomorrow. Tonight I also had a “Naked Salad” with nothing but balsamic vinegar on it because I forgot to re-stock my woodstock (haha) at Whole Foods today. This salad was surprisingly refreshing though!

img_1544.JPGI brought 2 fig cookies to school tonight and although this doesn’t seem like a big snack, two of these “Fig Newmans” are 140 calories, which I think is perfect for the nighttime. It’s now 11:30 though and let me tell you, I ate those cookies but I also had my fair share of licks from the chocolate mousse and the flourless chocolate cake we made tonight 😉 I’m sugared out for the evening!

    I had whole wheat pasta with goat cheese tonight, too! Mine had tomatoes and kalmata olives in it, though yours looks yummy as well- I may have to try it next time!

    I was waiting to see what you did with that goat cheese! Looks awesome. How does that pasta compare to 100% whole wheat? I really like whole wheat pasta and now find that white pasta is bland in comparison. I also like brown rice pasta but it gets really mushy really easily.

    That pasta looks awesome! I love spelt anything. My favorite way to eat pasta is with peas, sauteed mushrooms, and shredded parm – I highly recommend the combo!

    Anne you have no idea, I jokingly tell Jenna that these days are often magnified by her tendencies to turn in to a total spaz. I was legitimately concerned as the last time we had one of these days, she got in a minor fender bender, so anyways, I politely warned her to take extra precaution today!
    Now I have just heard the latest and I told Jenna as moderator today, I must report to all the girls her latest episode and the only fair way to do it, is to quote the exact text she sent that just made me fall out of my chair, you have just got to love Jenna!! …..

    “I’m having such a spaz day. almost choked on a pea in my pasta and then I sneezed and it came out my nose.”
