Behind The Butter

Freedom!

Willis. He runs.

IMG_8473
After a six day road trip across four states, Las Vegas, Death Valley, Grand Canyon and Yosemite, Willis has finally come to stay in California for the summer.

IMG_8478
Who knew basset hounds had such vigor, such speed, such charisma. He was a new man on California soil.

IMG_8477
He and Dexter are going to be the best of friends. I can just feel it.
Back to the food.
Tonight I ate sushi with the boys….someone’s gotta keep them in line, you know?

IMG_8484
Gosh, this was so good….the Sunset Roll with tuna, salmon, mango and avocado.
Plus, miso soup!

IMG_8483
A couple cookies from the batch I made this afternoon

IMG_8471
These are Super Charge Cookies (from Eat, Drink and Be Vegan), minus the dried fruit and plus half a bag of dark chocolate chips.
Gotta to go bed to rest my tonsil! My MOM comes in the morning!!!!

& I actually meant to ask you a question this your last post. When you use egg whites, do you throw out the yolks or do you save them for later? I feel so guilty throwing them away but I don’t know what else to do with them. Thanks! & enjoy your mama πŸ™‚

I also ‘baked’ (well, not really — it was no-bake, which actually I only realized at the end when the directions anti-climactically just said to refrigerate) tonight: Bob’s Red Mill Wheat-Free Peanut Butter Bars. I went to THE actual Red Mill in Milwaukie, Oregon, last month and picked one of these up in person, and there really are no words for how good it was. So, I was very pleased to see the recipe available online; definitely check it out: http://www.bobsredmill.com/blog/2010/05/01/wheat-free-peanut-butter-granola-bars. The Super-Charge Me Cookies are decent, too, but sometimes peanut butter goodies trump ’em.

I have a Basset that we adopted from the Humane Society. We saw that sad face and couldn’t resist taking her home. She is the most appreciative loving dog ever. She went from being a sad, lazy dog to running through the house to literally jumping over furniture! I would never have believed how strong and fast she was! It’s funny to watch her!

    Hey Jenna,

I’m a frequent reader but I’ve been kinda lurking, never really commented before.

I read your tonsil thing from yesterday, and I had the exact same thing my freshman year of college. It was a peritonsillar abcess, which is a bacterial infection of one or both tonsil(s). I got my first one and never had a fever, so I def. recommend seeing a DR if possible.

I kept getting them too, and eventually had so much scar tissue I had them removed. It was embarassing, I was twenty years old getting my tonsils out, and so was the five year old in the hospital bed next to me. Haha.

But yeah, it was swelling, pain, and white patches on the tonsils. Sorry you’re sick girl πŸ™ anti-inflammatories helped me too!!

On a happier note, Yay! Puppies! And that sushi looks gorgeous. I’m totally jealous.

Hi Jenna, have you ever made Super Charge Me cookies with whole wheat flour instead of spelt flour? I wanted to try out the recipe but I don’t have spelt on hand and didn’t know how much whole wheat to substitute because I heard you can’t use a 1:1 ratio.

Jenna – I have question/suggestion re. the logistics of the book discussion forum. I’m looking forward to participating in several of the discussions, but am wondering if housing the discussions in the “book nerd tab” might be more conducive to ongoing interactions. In any event, big thanks for the excellent list – I loved all of those I selected based on your recommendation: The Help, American Wife, Sarah’s Key and The Glass Castle.
