In 2006 at when I moved out of the college dorms and into my own apartment at the ripe age of 18 and had to stop living off cafeteria food, I quickly learned how to make the most nutrient-dense foods on a really small budget. Having been raised vegan, I never had to think about nor really cared what my parents were preparing and how they were preparing it.

Once on my own, I immediately had my Mom send me some recipes from her cookbooks. Fortunately one of those cookbook’s was none other than Dreena Burton’s masterpiece Vive le Vegan! This cookbook literally saved me from subsisting off beans and rice from the moment I made the first recipe until I graduated. In fact, VlV! is still my first go-to cookbook when I’m stumped on what to cook.

My all-time favorite on-the-go afternoon snack would 100% have to be Dreena’s Energy Cookies (found on page 38 of Vive le Vegan!). Almost every week in college I would make a batch of these delicious cookie-muffin like babies and grab one when I was in hurry and running out of the door (as you know, the story of all college kids’ lives ^.^ ). Not only are they delicious, healthy, and chock full of nutrients, they are also extremely cost effective and you can add or take out any of the “fun” ingredients. For example: Don’t like raisins? Use dried figs!
If anyone is interested in veganism or is just looking for a new cookbook to try, I highly recommend Vive le Vegan! Dreena’s blog http://vivelevegan.blogspot.com/ also has great resources!
    P.S.
Sorry for the long contest entry!
    P.P.S.

Pretty much every day my afternoon snack at work is a green apple and a mini clif bar — the best combo is apple + peanut butter crunch mini clif, because it’s almost like having peanut butter on the apple, which is tough to do on the go. (Or tough any time if you’re a PB fiend like me who can’t have it around lest I eat the whole jar at once!)

My perfect “on the go” snack, are TJs peanut butter filled pretzel. perfect combo of protein, fat and carbs for quick pick me up. I buy the bag and put it in little snack size baggies, portioned out per the nutritional data, and then I am also aware of the portion as well.

Pair this with an apple (Honey Crisp my favorite this time of year) for some fiber and you fully charged up till your next meal time.

I love the idea of having healthy cereal bars to grab and go (I LOVE Larabars!) but I have a very limited food budget and can’t bring myself to spend that much on a few bars…so I make my own! I’ve been using recipes I find on the internet (vegweb.com is great!). I can usually get about 12-14 bars from each batch and I pre-wrap them in foil so they’re ready to grab. Way cheaper, plus you know EXACTLY what’s in them!

I love dipping things, but hate Tupperware. So when I bring an apple I want to dip in PB, or carrots I want to dip in hummus, I put the fruit/veggies in a plastic ziplock. Then I put the dip in one of those plastic dixie bathroom cups and throw it in the ziplock too. No tupperware, and it’s recyclable 🙂

    Hey Jenna,

I absolutely love taking rice cakes and almond butter. Apples are also a great switch up (especially since you can get apple cutters). They are both easy snacks and that are great combinations of proteins and carbs or fruit. Another all time favorite is making my own trail mix. Generally I’ll put some craisins, harvest crunch granola, dried apricots, chocolate chips (dark) and oat squares. Mmm.. Easy other ones are PURE BARS (not that I have too many…) and Luna Bars!

    Thanks so much

I always have a pear, apple, plum, or peach hanging out in my purse. I also have several different flavors of fruit leathers in case I don’t have the fruit!

Mmm, my fave afternoon snacks are Trader Joe’s cinnamon almonds – soooo incredibly delicious! Otherwise, a honeycrisp always does the trick.

Either greek yogurt with random broken up granola bars, or I like to make make edamame and toss it in a little sunflower seed oil with spices and eat it out of a tupperware with a mini dessert spoon from the United Arab Emirates or from Ecuador. I always take spoons to remember my travels.

I have never tried these bars but they sound great! I try to have a combo of protein and carbohydrates to keep me full. I eat Odwalla and Kashi bars but would love to add something different to the mix. An apple and a yogurt is my usual stand-by snack!

    Hi Jenna!
    Hope I’m not too late!
My favorite snack when I’m on the go is:
    Flat out Flat bread
    with cucumbers
Spead on some Laughing Cow light Swiss Cheese (in the little triangle)
roll it up like a wrap- almost no calories, high in fiber and filling!

Hmmm… I wasn’t planning to post anything, but I did enjoy reading some of the ideas for an afternoon snack. I will definitely have to get some Pure Bars to try. I’m not too good with “snacks” I’m usually so busy chasing around the kiddos or cooking dinner that we typically don’t snack but maybe I wouldn’t be such a grumpy monster before dinner, lol. I enjoy your blog!!! Good luck picking a winner and reading through all of these ideas in a timely manner!

My favorite mid-morning snack that I bring to work almost everyday is a 50/50 mix of yogurt and cottage cheese, agave, flax and whatever fruit is handy. Maybe nuts, maybe granola-very versatile and the cottage cheese mellows the yogurt acidity and the yogurt cuts the saltiness of the cottage cheese.
    Thanks!

My favorite afternoon snack almost always involves tea (because I live in Boston and I’m always cold!) and sometimes fruit and sometimes a baked good. I made up a recipe for banana pepita muffins that was pretty rockin’, that’s been my favorite snack lately.

My go-to afternoon snack is FRUIT! I carry an apple slicer with me in my purse (That’s normal, right?) and use it to chop apples, pears and other fruits. I also love a pita with hummus and other veggies if I am at home to make it.

    Thanks for the opportunity!
