It also has to be super fast and something that does not have to be refrigerated! My fall backs are almonds or energy bars, as both can be carried with me and bites grabbed whenever I have a spare moment.

I am a graduate student so I basically eat all of my food on the go. Snack wise I love mixing cereal with trail mix and munching in class. By cereal I mean Peanut Butter Puffins. By trail mix I mean a few peanuts and raisins, but mostly M&Ms.

My favorite to-go snack is a trail mix of shredded wheat cereal, pecans, dried cherries, and chopped dark chocolate. So much goodness and so easy to eat at work or in the car!

It’s filling, warm and satisfying, and a change of pace from my other go-to snacks: larabar assortment that is ALWAYS in my purse! I like choices and variety in my snacks, what can I say!

It is portable and easy to eat even if I am driving! I always carry an organic chocolate brownie Z bar and a Kashi Chewy Granola Bar in my purse. Being hypoglycemic I need to eat often to keep my blood sugar up.

I also love to simply grab a nice juicy apple with some nuts as a quick hunger fix. Even an Arnold’s thin with some nut butter and preserves does the trick quite nicely.

November 6, 2009 at 8:25 amIn 2006 at when I moved out of the college dorms and into my own apartment at the ripe age of 18 and had to stop living off cafeteria food, I quickly learned how to make the most nutrient-dense foods on a really small budget. Having been raised vegan, I never had to think about nor really cared what my parents were preparing and how they were preparing it.
Once on my own, I immediately had my Mom send me some recipes from her cookbooks. Fortunately one of those cookbook’s was none other than Dreena Burton’s masterpiece Vive le Vegan! This cookbook literally saved me from subsisting off beans and rice from the moment I made the first recipe until I graduated. In fact, VlV! is still my first go-to cookbook when I’m stumped on what to cook.
My all-time favorite on-the-go afternoon snack would 100% have to be Dreena’s Energy Cookies (found on page 38 of Vive le Vegan!). Almost every week in college I would make a batch of these delicious cookie-muffin like babies and grab one when I was in hurry and running out of the door (as you know, the story of all college kids’ lives ^.^ ). Not only are they delicious, healthy, and chock full of nutrients, they are also extremely cost effective and you can add or take out any of the “fun” ingredients. For example: Don’t like raisins? Use dried figs!
If anyone is interested in veganism or is just looking for a new cookbook to try, I highly recommend Vive le Vegan! Dreena’s blog http://vivelevegan.blogspot.com/ also has great resources!

Sometimes I bring a baked sweet potato to work and just snack on that throughout the day. They are sooooo good. Oddly enough, I never put peanut butter on the sweet potato.

Pop this into the magic bullet and blend it up with just a small amount of water so it’s more like a pudding than a shake. Then for added crunch and nutrition I will add some raw walnuts or cacao nibs!!! Yum!!! My friends at work call it Kim’s Bile juice!! 🙂

I buy the bag and put it in little snack size baggies, portioned out per the nutritional data, and then I am also aware of the portion as well.
Pair this with an apple (Honey Crisp my favorite this time of year) for some fiber and you fully charged up till your next meal time.

November 6, 2009 at 9:36 amI love the idea of having healthy cereal bars to grab and go (I LOVE Larabars!) but I have a very limited food budget and can’t bring myself to spend that much on a few bars…so I make my own! I’ve been using recipes I find on the internet (vegweb.com is great!). I can usually get about 12-14 bars from each batch and I pre-wrap them in foil so they’re ready to grab. Way cheaper, plus you know EXACTLY what’s in them!

If I have a little more time (at least 30 seconds required!) then my absolute favourite snack these days is Mary’s crackers with sliced sharp cheddar and sliced figs. Yummmmmm 🙂 Keeps well in a baggie or tupperware, and is a perfect flavour combo!

They are in individual portions which is helpful for those (me!!) who have a hard time with portion control. Love it! For a higher protein snack I love Trader Joe’s Egg White Salads that come in different flavors. I like the Spicy Ranchero variety. Can you tell I HEART TJ’s?!

Then I put the dip in one of those plastic dixie bathroom cups and throw it in the ziplock too. No tupperware, and it’s recyclable 🙂

November 6, 2009 at 12:29 pmUsually gatorade and right now i have a trail mix of almonds, dried cranberries and almonds that I have been eating some of before i work out in the afternoon. i have just started working out and it has given me a lot of energy. I like the energy bars but they get kind of pricey. I haven’t tried pure bars yet (I’m not sure they sell them in Idaho!)

November 6, 2009 at 12:55 pmmy fav snack on the go is oatmeal cookies with dark choc chips. i make it completley with oatmeal and skip the flour by putting two cups of oatmeal in the food processor and grinding it until it resembles flour. plus since i have choc chips in them i use half the amount of recommended sugar.

Apparently I live in a cave, because I’ve never had the pleasure of trying Pure or Larabars.
For me it’s essential that snacking is easy so usually it’s an apple with some almonds, or pb. If lunch was small, or dinner is going to be late I sometimes eat a hardboiled egg on a Wasa cracker with some cut up veggies.

Plus, if I don’t end up eating the bars, I can just toss them back in the cabinet for another time. (doesn’t work so well with the cheese!)

I’m constantly on the road for work and keep a stash of lara/clif/greens+ bars in my bag and grab apples and bananas from the continental breakfasts!
I wish there were more practical ways for me to carry yogurt, as that would def be my fave!

I absolutely love taking rice cakes and almond butter. Apples are also a great switch up (especially since you can get apple cutters). They are both easy snacks and that are great combinations of proteins and carbs or fruit. Another all time favorite is making my own trail mix. Generally I’ll put some craisins, harvest crunch granola, dried apricots, chocolate chips (dark) and oat squares. Mmm.. Easy other ones are PURE BARS (not that I have too many…) and Luna Bars!

(i keep a little ziploc tupperware cup with a half a cup of pb in my purse at all times!ssh! it is our secret!) so mostly i grab a banana or apple and stick in there!
