Need My Swimmies

Hey guys!

Another packed day over here! I just got home from work and the gym and I’m feelin’ pretty pooped and ready for a glass of wine!! 🙂 It was a great day though and everyday I’m there, I really do feel like I learn more and more.

To start though—this morning I had a filling breakfast of a Thomas 100% Whole Wheat bagel with almond butter and preserves with a banana and a yogurt on the side.

Today for lunch I packed a turkey sandwich on whole wheat with pepperjack cheese and honey mustard. I also packed a bunch of snackies:

Midmorning I had half of the Balance Pure bar (plus a small roll that just came out of the oven). For lunch, I had the sammie, yogurt and apple. I didn’t end up eating the pure protein bar. Instead, I chose the larabar for my after-work/pre-gym snack.

First thing this morning I baked more pumpernickel rolls. Six full sheet trays full! I snagged one right when it came out of the oven, after I had sprinkled it with caraway seeds, salt and melted butter. Perfection. Then, I baked four more loaves of cranberry walnut orange quick bread for lunch service.

NOTHING compares to how amazing these smell while baking!!!

I also whipped up some “reverse chocolate cookies” and baked more chocolate chip and peanut butter.

Now this is some extremely chocolatey cookie dough!

I also baked a ton (the recipe yielded 775 crackers actually) cheddar crackers, which are a signature of the club. These include 5 lbs of cheddar cheese, cayenne pepper and white pepper. Very spicy, cheesy and delicious!

I also made two lemon olive oil cakes and flatbread and pumpernickel dough for tomorrow’s production! A very FULL 8 hours! I couldn’t get a picture of the cakes because I left while they were in the oven but I had to juice 20 lemons by hand to get the amount of juice I needed. They better have been worth it!

After work I had half of my larabar and went to the gym to swim laps. Okay. Ryan can attest to this: I’m a sucky swimmer. I sort of just swim a couple laps full force, do the doggy paddle for a bit and then get some sun….wearing a bikini the whole time. When I walked down to the pool today I prayed no one else would be there. But lo and behold, MY PERSONAL TRAINER FROM YESTERDAY was standing there coaching a girl. It was sort of mortifying because then I felt like I had to swim like michael phelps and he tried to coach me through some laps of freestyle, my worst stroke. After about half an hour I staggered out, called it a day and hit the locker room. It was kinda embarrassing but oh well.

After swimming, I ate the other half of my bar on my way home. I’m about to hit the shower and help Betty with dinner! I’ll be back to update before bed tonight. Yay for the debates being on!!! I’m SO excited! Hopefully I can keep myself awake for them!!!

    don’t feel bad, michael phelps is half human/half fish. plus pools are for laying out anyway, right? 🙂

    I feel your pain with regards to the swimming. You are probably better than me though because I can only do the doggy paddle and I don’t think I could even make it a full lap unless I flipped over and swam on my back for a while.

    Glad that you seem to be loving your job so much. You definitely picked the right profession! Being miserable at work can mean being miserable in life, so kudos to you for figuring it all out at such a young age. Look forward to following along as you learn more and also looking forward to seeing what Betty cooks up!

    I got fitted for running shoes this past weekend in Boston and also got Brooks. I think they are the same as yours. They definitely feel way different than any shoes I have had before but so far so good. Do you find your toes feel so roomie compared to other shoes?

    I’m cracking up at you in the pool. That sounds just like me. I am a horrible swimmer and used to be a lifeguard for the love!
    Like you, I’m just not good at swimming laps. I’m sure your trainer gave you an A for effort.

    whew, so many baking creations!! glad you were well fueled for the day and for swimming- sounds tough!! I’ve never really taken to swimming laps, I always tried to get out of swim team practice early or cut out a few laps here and there- so you’re totally impressing me 🙂 have a nice night with the new “fam” 🙂

    I’m a student who also has a job, etc, and so I also have very long days. I try to eat real meals, but many days I just have to grab and go, and so I rely heavily on bars like you. I know that they are healthy and balanced, but sometimes I worry about eating more than one per day many days a week. Does anyone have any knowledge about limiting bars like Clif, Z Bars, Larabars, Odwalla, etc?

    Oh my goodness – all of the stuff you are making at work looks SOOOO good! I love that cherry vanilla yogurt – it’s my favorite! 🙂

    Does your gym offer swim lessons? It’s never to late to learn! When I was in high school I actually taught a couple of adult swim lessons and they were awesome. Instructors often spend more time one-on-one with adults to help meet you where you are at (compared to kid lessons in a large group). Just a thought. And it doesn’t matter if you’re not an amazing swimmer, I’m sure your trainer was happy to see you working hard.

    hahaha I totally resonate with your swimming story! Oh my, I would definately had felt the same way! lol My problem is that I really would love to do a triathalon next year but the swimming section would be my hardest and I’m sure I would look like a fool doing it!! My best friend is a great swimmer and actually coaches a rec team but she lives in Seattle and I live in Indiana 🙁 I should check out if there are lessons anywhere around here. But at least you’re out there doing it!! Go You!

    Actually swimming is for squares anyway….
    Laying around and soaking in some relaxation is much better. :]
    Hooray for making lots of delectable eats. I’ve never had Larabars or Fage before!!! I need to get in gear, seriously.
