On The Go!

I’m a little tired this morning and we didn’t even get out that late last night from school! I was home at 11:15, which is sort of a record for this particular class. I hope that means tonight isn’t a really late night to compensate. 🙁 I got to school last night at 4:45 and worked straight through until it was time to go at 11:00. The good news is that I got my cakes baked for the Practical that I missed. Tonight I have to get there super early again (around 5:00) to decorate the cakes and get graded. Whew! Last night we baked Devils Food Cake and a Hazelnut Joconde Sponge Cake, which we will be decorated and finishing up tonight.

This morning even though I felt really tired, I woke up early and hit the gym. I had half a banana with almond butter and went to the gym for a lower body + abs workout. When I got back home, I made another bowl of wheatberry oatmeal! I used soymilk, 1/3 cup oats, 1/4 cup wheatberries, some dried cherries, the other half of my banana as well as some almond butter. Creamy goodness!

For lunch today I am packing some of my favorite packaged butternut squash soup. This stuff is great for when you are on the go and it does taste remarkably like homemade. I tried to take a picture of the blue corn chips I’m bringing to have with my soup but the photo didn’t turn out at all! Weird! I’m also bringing and apple, and some peanut butter puffins for a snack later on.

    4:45-11:15??? no WONDER you’re tired, girl!! at least you got to make two scrumptious cakes (Devils Food Cake & Hazelnut Joconde Sponge Cake? divine!!). I hope that tonight’s class isn’t too hard!

    Wow~those are some LONG classes! I would be tired too–I’m impressed you still managed to get yourself to the gym~I wouldn’t have made it out of bed :p

    And yum–butternut squash soup–tried that stuff this year for the first time and has been hooked ever since!

    Wow, Jenna, you’re really puttin’ in some long hours for school! It’s no wonder you’re so tired. But keep your chin up, the week will get better and you’ll be back on track with the rest of the class. 🙂

    I was seriously contemplating buying wheatberries last time I went grocery shopping but decided against it because I didn’t know what I would do with it, but now I wished I had bought them! Your oatmeal looks so delicious with them.

    I had wheatberry oatmeal this morning too! And I’m still full 3 hours later, which NEVER happens.

    Wow, sounds like your classes are intense! Good luck with the practical makeup tonight.

    That hazelnut cake sounds delicious… any chance you’ll post pics?

    Hey Jenna! I’ve been reading your blog forever – posting now cause I FINALLY have my own (http://artofgoodhealth.wordpress.com – check me out!! I don’t know how to make people aware of it!) I want to post on others! That butternut squash soup brand (if you see my post from yesterday!) is ALSO my favourite brand – I’m totally obsessed! It’s so much creamier than all the other brands, I think its partly due to the fact that they use soy milk in it. Anyways, good pick!

    I usually eat the whole thing. These small containers hold 2 servings at 90 calories each. I would go hungry if I only ate half the container, which is what happened yesterday when the other half spilled 🙁 Whenever I make soup from a can I most always eat the entire thing…
