Pasta With Cheese!

I made a simple dinner for myself tonight. I’m still on sort of a “soft” diet and I have this huge thing of part-skim ricotta cheese in the fridge so I decided to make a nice pasta with cheese sauce with it! Now, who may I ask, doesn’t love mac & cheese? But it’s sooo much better and so worth it to make your own than eat kraft! I made a light cheese sauce with a splash of milk, a bit of ricotta and 2 tbsp of parmesan…add a grind of nutmeg, some salt and pepper to it and you have yourself a meal! I put the sauce over 2 ounces of whole wheat penne pasta and it was the perfect amount. I feel full but not heavy at all…that’s the beauty of ricotta cheese! I also had about a half cup of steamed broccoli with it to get some more greens in. And….I allowed myself 2 ounces of red wine (1/4 cup) 😉 I felt like I deserved it after being so sick!!! I hope you all try this pasta at home because I think you will be surprised at just how “gourmet” and fancy it tastes on such little effort! It took me 10 minutes to make this entire meal and it was so good and comforting.

I wanted to go to the gym today but knew my body needed one more day of rest so I went for a walk outside instead. I walked for about 45 minutes and it was so nice to get a breath of fresh air! Before I went I snacked on kashi crackers with peanut butter and jelly (10 kashi crackers with 1/2 tbsp peanut butter and jelly).

This dinner was about 380 calories.

    Dinner looks amazing as always! Your meals never seize to inspire me! Because of you, I decided to make a pasta dish tonight with some veggie meatballs. 🙂

    I had a quick question that I know has been beaten to a dead horse; how many grams is a serving of cooked pasta?

    Erica,

    One serving of dry pasta would be about 56 grams, or 2 ounces. Cooked….I’m not exactly sure! I have never weighed my pasta after cooking it because its always in a sauce and in my belly too fast for me to reach for the scale! I find it a lot easier to weigh when it’s dry, as that is what the serving size is based on. Hope that helps a little and I hope your dinner turned out fabulous…veggie meatballs….sounds delicious! 🙂
