Soup for Lunch!

So, yoga was GREAT and I feel a ton better. It was a very difficult, sweaty, powerful class that I def. struggled though because I wasn’t feeling my best and I haven’t done yoga in about a week and a half, but by the time I was done I felt a lot better. Since I had an early light breakfast (not as many calories in my oats this morning as usual), I snacked on 1/4 cup of fiber one cereal on my way to yoga. And then I was starving on the way home from yoga because it was lunch time! I was craving soup and forgot to defrost my chunky tomato lentil soup that I made a couple weeks ago, so I stopped at this little European cafe and picked up a bowl of their “soup of the day”, which was white bean and spicy ham. It was served with a homemade, yeasty soft white roll that I devoured with the soup as well. It was so good! I’m sure this was a pretty light lunch, calorie-wise–probably only about 400 calories for the soup and roll because the soup was only about 1 cup’s worth. I’m sure I will be eating a substantial snack in a little bit! 🙂

    Looks delish! I had a question regarding your trip to france last summer… what exactly brought you there again? I’m pretty sure I recall you saying it was some kind of writing program? Was it through your school or is it open to all graduates? Just curious 🙂 thanks!

    Hi girls-

    Danielle, I went to france for a summer writer’s workshop. it was an independent program (find it here-http://www.pariswritingworkshop.com/). It worked though because I got the last 6 credits that I needed to graduate! I studied and wrote poetry, fiction and food writing (my specialty!).

    hk- I graduated from College of Charleston in SC with a degree in English and creative writing. 🙂
