Dinner

Spoiled!

Hey yall!

Bad news is that I don’t have any pictures but the GOOD news is that I did take a ton of pictures and I will find internet tomorrow via my laptop and load em’ on up! 🙂 Right now I’m just concentrated on unpacking and getting ready for my first morning of work tomorrow! eek!!

So tonight, Betty made a FAB meal of baked salmon with pesto and kalamata olives as well as homemade mac and cheese, grits with vidalia onion and parmesan cheese and salad with pine nuts, dried cranberries and goat cheese. She loves to cook and I’m sure not complaining over here! I filled my plate and it was amazing…the grits tasted like heaven.

She even (get this) packed me lunch tomorow! She packed me a big mountain of salad (sans dressing) with a nice piece of salmon on top. I’m definitely getting super spoiled and I promised that on my days off I would cook dinner for them as well as dessert!

I didn’t get to Publix tonight because we ended up having wine and talking politics after dinner (I’m like 80). I had that one glass of chardonnay before dinner that I mentioned before, as well as half another glass and half a glass of cabernet with dinner to equal 2 glasses. No dessert because I’m absolutely stuffed!

Tomorrow I’m setting my alarm to wake up early and go for a nice 3 mile run before going to work at 10:00. I have NO IDEA what my schedule will be like tomorrow or any other day for that matter but I think I’ll find out a lot more info tomorrow when I go through “orientation”. I really hope yall don’t mind one daily recap post during the next couple months…I just have a feeling things are going to be crazy! I plan to take pictures though a work so you can see what I’m working on and whatnot. Hopefully that will make up for it ;).

Okay–it’s 9:00 and I’m off to take a hot shower and get in bed to read. I miss Dexter and Ryan but from what I hear, they are having fun. Ryan had his grandma and Erin (his sis) over for dinner tonight and he made his famous lasagna. Erin brought her tiny dog over and him and Dexter seemed to be having a field day playing and chasing each other around the apartment.

I’m off to bed—-stay with me and this crazy internet situation—I promise we will be back up and running in no time even if I have to sit at Panera for an hour a day for free wireless!

Have a super night—talk to yall tomorrow!

Ooooh dinner sounds just scrumptious! Salmon and pesto go together like peanut butter and jelly, in my opinion. 😀
