This morning I decided to switch things up a bit from my traditional oatmeal. Everyone (well in the blogworld, that is!) seems to use pumpkin puree in their oats but I have never been a diehard pumpkin fan. I still love pumpkin pie, pumpkin bread and pumpkin cookies…but last year I ate canned pumpkin plain and got a really bad tummy ache so I’ve steered clear since. Enter butternut squash. My love. My favorite. My vegetable child. Anyways, I loooooove me some butternut so when I saw that Super Target had canned organic butternut squash, I just had to grab some! So, this morning I had Butternut-Banana-Peanut butter Oatmeal! I used 1/2 cup multi grain cereal, 1 cup lite vanilla silk, 1/2 cup canned organic butternut squash, cinnamon, 1/2 banana and 1 spoonful peanut butter.
It was pretty good. The butternut seemed to mellow out the flavor of the bowl though and I needed some brown sugar to pull it all together. Once I added the brown sugar, it was delish. The butternut also added so much volume to the bowl that it was hard to finish! Wow! Hopefully this will keep me full and going strong all morning for my test.
I also packed some snacks:
I like to eat the string cheese on my first break (around 8:30-8:45) and the bar on my second break (around 10:00). Works for me!

Last week target had a sale where ANY FOUR Kashi products were $11 and you received a 5 dollar gift card. It was pretty sweet. Regular price is probably 3.00 for a box.
Those bars are pretty good. They remind me of Nutrigrain bars but not as nauseously sweet.

That’s so exciting- I have that Deceptively Delicious cookbook and every 3rd recipe calls for pureed squash. Canned would make it so much easier!

I believe you can also get pureed squash in the frozen foods aisle.
