Squash My Oats

This morning I decided to switch things up a bit from my traditional oatmeal. Everyone (well in the blogworld, that is!) seems to use pumpkin puree in their oats but I have never been a diehard pumpkin fan. I still love pumpkin pie, pumpkin bread and pumpkin cookies…but last year I ate canned pumpkin plain and got a really bad tummy ache so I’ve steered clear since. Enter butternut squash. My love. My favorite. My vegetable child. Anyways, I loooooove me some butternut so when I saw that Super Target had canned organic butternut squash, I just had to grab some! So, this morning I had Butternut-Banana-Peanut butter Oatmeal! I used 1/2 cup multi grain cereal, 1 cup lite vanilla silk, 1/2 cup canned organic butternut squash, cinnamon, 1/2 banana and 1 spoonful peanut butter.

It was pretty good. The butternut seemed to mellow out the flavor of the bowl though and I needed some brown sugar to pull it all together. Once I added the brown sugar, it was delish.  The butternut also added so much volume to the bowl that it was hard to finish! Wow! Hopefully this will keep me full and going strong all morning for my test.

I like to eat the string cheese on my first break (around 8:30-8:45) and the bar on my second break (around 10:00). Works for me!

    I love pupmkin in my oats and I imagine the squash is pretty much the same… great way to get veggies into your meal in the AM

    Mmm, your butternut oats look delicious.. I actually have a can of pureed sweet potato of the same brand, and I’ve been wanting to try it in my oatmeal as well.

    I have never tried the blackberry graham flavor of the Kashi bar… is it really good? Like, better than the others?

    I love butternut squash! What’s your favorite way to enjoy it? I’d have to go with roasting it in the oven and munching on it with ketchup.

    How are those Kashi cereal bars? They look like Fig Newtons! Do they taste anything like them at all?

    What a fun twist for your oatmeal, using butternut squash (my favorite squash, besides acorn)!! I’m enjoying Pumpkin-Banana-Hazelnut butter Oatmeal this morning 🙂

    I tried the pumpkin/oats combo once. It changed the texture but not the taste, maybe I’ll give it another shot. Happy Monday Jenna!

    I keep waiting for those damn Kasi bars to go on sale at Publix so I can try them. 🙁 I just can’t bring myself to spend $3.69 on them. Are they any cheaper at Target?

    Last week target had a sale where ANY FOUR Kashi products were $11 and you received a 5 dollar gift card. It was pretty sweet. Regular price is probably 3.00 for a box.

    Those bars are pretty good. They remind me of Nutrigrain bars but not as nauseously sweet.

    Yummy oatmeal! Every blog I read…they are eating some kind of squash oats today! I guess Fall is in the air.

    Wait, really? Target had canned butternut squash?? Was it in the baking section or near the canned veggies?

    That’s so exciting- I have that Deceptively Delicious cookbook and every 3rd recipe calls for pureed squash. Canned would make it so much easier!

    Well plain canned pumpkin is not good at all. Delicious in oatmeal though.

    I believe you can also get pureed squash in the frozen foods aisle.

    Hmm, I’ve combined my cold overnight oats with pumpkin/spices/honey and yogurt, but not cooked oats. Will have to try this.
