I made a new discovery at lunch today…..I really really really like canned salmon!! I always thought it sounded so gross…tuna was fine, but salmon–no way! I can never really get full though when I eat those little tuna pouches no matter what I do for some reason and I had a forlorn can of salmon in the back of my cabinet that needed to be eaten so I thought why not? It was so great and I am going to buy more next trip to the store!! I mixed 3 ounces of it (basically the entire can) with 1.5 tbsp light miracle whip, a chopped up carrot and some celery. I also mixed in some whole grain dijon mustard. It was very filling and tasty as well! Way more filling than canned tuna for some reason I can’t understand. I also packed a homemade roll from the other night to make a little sandwich with my salmon salad. Yum! On top of that, I had 1/2 cup of Cedar’s Tabbouli salad (my FAVORITE!) and a half cup of red grapes. This lunch was great and filled me up until I had my snack of 4 ounces cottage cheese and pear slices at 3. It was easy, portable and tasty—highly recommended!
Sorry the grape picture didn’t turn out so well! They sure tasted good though!
This entire lunch was about 549 calories.
Off to make dinner! 🙂

January 6, 2008 at 10:10 pmAnd yet another thing that I have yet to try! I absolutely adore salmon but was nervous about trying the canned because I don’t like canned tuna one bit. I hate the smell, taste, even kind of the way it looks. 🙂 Are there any similarities between the two, other than consistency? What’s the difference in taste from a filet of salmon?Also, how fishy is it? Thanks, I feel uncultured, haha. But I’m glad to hear you enjoyed it! Thanks so much by explaining how you made the salad too because I would definitely have no idea.

Have you tried the canned FLAKED salmon (it is ‘tuna like’ in consistency (i.e., no bones/skin!). I am obsessed with it, and I eat it several times a week. Much better tasting than canned tuna (and I would like to think healthier too!).

No! I can only find it at Whole Foods, unfortunately! It’s worth the hunt though…it’s the best store bought tabbouli I have ever tried….I’m addicted to the stuff! That and cedar’s garlic lover’s hummus. A warm pita with their hummus slathered on with tabbouli would be my perfect meal. Try to find it if you can!

I have had the ‘whole’ salmon in the can before (if thats what you’d call it!) and there was little bones and some black skin in it…not appealing! I love the tuna style salmon though…no mess, no bones, etc.
