Good evening!
I had the yummiest snack combo this afternoon!

Twas a half cup of Greek yogurt mixed with 2 tbsp PB2 to make that oh-so-delish “peanut butter mousse”, then I topped it with dried strawberries, fresh blueberries and half a homemade blondie! Can you even say holy yum?! A fat slice of watermelon on the side:

The snack was power fuel for an afternoon filled with conference calls and emails. Then, this evening I headed over to my parent’s house to cook up Ryan’s big catch!

And then Ryan came over after work and I cooked up a feast of grilled red snapper, orzo with asiago cheese and toasted almonds and grilled veggies (sweet potato, zucchini and bell pepper). The fish was awesome—talk about fresh! This is how I love to eat….fresh, whole foods. Yay!

For the red snapper, I just grilled it and then topped it with caramelized onions and a pan sauce made from lime juice, orange blossom honey and whole grain mustard. It was a hit!

A glass of red on the side:

We all loved it!
Of course my sweet tooth was kickin’ after dinner so I dug into the last coconut milk ice cream bar. These totally rock my world.

Re: your lunch post: i’m so glad you shared your feelings about the primal strip!! I remember seeing it for the first time here and thinking “that doesn’t really look like the kind of food jenna would like”, but that read that you LOVED it so i thought it was so funny!!! You’re right- sometimes you really need to think about what you’re eating… I was just wondering, do you still eat Odwalla bars? (or other kind of bars?)
One day closer to Thursday 😉

June 9, 2009 at 1:52 amStrange question… but, I have to ask… do people ever mistake Ryan for your dad? I know is he older than you by quite a few years, but he really does look older and you look pretty young. I’m just curious!

June 9, 2009 at 11:29 amRed snapper is my favorite fish on the earth, so I am jealous you got to eat it that fresh. I was snorkling in Jamaica last week and saw them….is it sad that I was salivating?

June 9, 2009 at 1:53 pmI would like to try PB2, especially that combination–sounds great!
Don’t want to be a Debbie Downer about your lovely dinner, but wanted to share this link with you about the over-fishing of red snapper. I know you are very aware and considerate about being organic, sustainable, etc., so I thought you might appreciate this information. I try to consult this list before I purchase any fish (I know you did not purchase it, but still wanted to share).

June 9, 2009 at 2:55 pmI in no way think that the comment about Ryan looking old enough to be your dad is funny, but the other week I was running with my boyfriend (who is ONE year older) and we passed this older woman who moved out of the way for us. I said “Thanks!” and then my boyfriend looked back and said, “Thanks, by the way!” and she replied, “No worries, your DAUGHTER already thanked me. You’re a good man!” TOTALLY threw us off … some peopleeee! 🙂
