The Return of the Camera And A Very Messy Wrap

The return of the camera!!!!!!

Goodness, the last 24 hours or so have been so stressful without my camera by my side. If you all were used to photographing everything you ate and had done so for months and months…then suddenly you couldn’t…you would know how I felt! In a sad, sick way I felt like half of me was missing! haha ๐Ÿ™‚ Poor Ryan tried so hard to send me my cord….but then it turned out he sent it to the wrong address (I know, this whole thing is actually humorous now) and who knows if I will ever see it again. That cord has a short in it anyways and I was sick of lugging it around with me wherever I went, so I decided to move into the 21st century and get one of those new-fangled memory stick thingy-migigys that you just put your memory card into and plug into your computer. And..it works! I also got a camera case so I stop getting crusty danish dough in my camera.

I feel pretty productive today, even though I haven’t worked out yet (I am going to the downstairs gym shortly to do some elliptical), I have been to Best Buy, been to Michaels to buy a template to cut my pastries perfectly every time, AND I have made the sweet potato filling for the potstickers. I’m going to actually stuff the potstickers on Friday morning when I make the Tarte Tatin, just so I give it to Karen fresh on Friday afternoon. Right now the gingery, spicy sweet potato mixture is sitting in my fridge. I tasted it and its pretty good! I’ll have to keep a potsticker for myself ๐Ÿ˜‰

For lunch today I made another wrap. I have a habit of overstuffing my wraps, especially when it comes to hummus, but I just can’t help myself! Today I used the last of my sprouted wheat wraps and layered in it about 4 tbsp of hummus, a grated carrot, a sliced red bell pepper, some cucumber slices, broccoli slaw…..and the special topping was soy feta cheese!!!!! This feta was in my wrap I got at the Dandelion Community Cafe Saturday for lunch and I loved it so much I actually asked the chef there was it was so I could go buy it. Well, easy enough—I found it at the health food store last weekend and it was PERFECT in my hummus wrap! The brand of the cheese is “Sunergia Soyfoods” and I bought the Mediterranean Garlic & Herb variety.ย  I had a very difficult time rolling up the wrap and getting it from hand to mouth, but at least it was tasty and filling! I also had a nice juicy pear to accompany it.

    i’m not gonna lie but i’ve been having major withdrawal…a picture’s worth a 1000 words, right!? i can’t imagine how it was for you though since you’ve been so committed to the site ๐Ÿ™ your lunches are so creative/inspiring. kudos to you!

    Random question – when Jenna stopped posted calories and nutritional info, some people were wondering how they could figure out that info for recipes that were posted. Someone mentioned a site where you can put in a recipe and it gives the nutritional info – can you repost? I found one, calorie-count.com, but it didn’t seem to be very accurate. I’m definitely not one to obsess over calories, but like to have an idea of what I’m making when trying new recipes.

    KatieB—try nutritiondata.com…their “pantry” section allows you to enter ingredients, the amount, and break it down to how many servings total…gives you the fiber/protien/nutritional analysis. ๐Ÿ™‚

    Jenna—thats probably the most perfect lunch to post as a way to start the pictures again! ๐Ÿ˜€ It’s so colorful and healthy looking…yum!!

    your lunch looks SO amazing, i think i’ll use my remaining wrap to make something similar tomorrow. yum!

    just curious jenna, are you going to post pictures from the days that are missing them? or did you not take pictures of your food those days?

    messy, DELICIOUS wraps are the best kind! :0D haha, ironically, there’s quite a few vegan bloggers posting about NOT liking the soy feta… it’s all in everyone’s individual tastes, I guess! :0)

    Def. try that wrap and hopefully you can find that feta too because I really enjoyed it. I posted a picture of last night’s tempeh on here but the remaing (3 meals I think?) I didn’t take photos of. Sort of a break and I figured everyone knows what my usual oatmeal bowl looks like by now…haha! Question for you: what brand of soy yogurt do you buy? Do you like it?

    horray for the camera!!! it was kinda fun, though, picturing all your delectable goodies in my head!

    i think i’m going to have to pick up broccoli slaw next time i venture to the store. it looks so delicious!

    I love broccoli slaw! I use it for everything–I posted a few days back about how I put it in my “Snobby Joes.”
    Anyway, Jenna I have a quick question for you: what brand of hummus do you use? I feel like I have tried them all, but I was just curious to see what your favorite brand is.

    When I shop at Whole Foods I always buy the whole foods brand stuff found in the deli section..they make a variety of flavors and I like the roasted garlic. When I shop at my regular grocery store (usually) i buy a brand called NeJames because it only contains chickpeas, tahini, olive oil and garlic. nothing else. A lot of supermarket brands have different preservatives in them so I always read the ingredients. Sometimes I also go to the lebanese restaurant near my apartment and buy their homemade hummus from them. That’s my favorite!!!!

    Question for you about storing your broccoli slaw: I bought a bag on Sunday, and didn’t finish it (clearly)…I opened it last night to put some in my salad, and it had gone TOTALLY brown and gross–does yours go bad this quickly? How do you store yours? I left mine in the bag it came in, rolled up and tightly sealed with a clip. I do this with my salad and it usually lasts for at least 5 days, so I’m confused why this went bad so quickly!!

    I’m so surprised!!!!! This may sound gross…but I’ve had a bag of for about 2 weeks now and its totally fine! I’ve just kept it shut with a clothespin. I “found it” at the bottom of my vegetable drawer and was soo surprised it wasn’t brown. I don’t really know what to tell you except that’s very weird and maybe the expiration date of the slaw was sooner than mine. I would just check the date on it and buy a new pack!

    Nicole that surprises me, too! Mine stays fresh for a llloooonnnngggg time. You must have gotten a bad batch or something? Even the time I left it open a long time, it was just dried out a little, definitely not brown or mushy.

    I have a question for Jenna or any fitness guru! I’ve been running most days as my workout (i’m new to this) and I was wondering how often I should take a rest day, because my legs have been pretty tired and sore lately! Thanks!

    Andrea,

    You really should not run everyday because its way too much of a strain on not only your legs, but your entire body and can lead to back and knee problems down the road. I would DEF. say to run every other day and take a rest break in between. That would be much more beneficial for your body!

    Congratulations on getting your pictures up! It must have been so hard not to be able to take pictures. Your wrap looks so good. Sometimes it’s worth it having messy food.

    I stopped at whole foods today, and was so happy to see the soy feta you recommended, and i quickly snatched it! I can’t wait to try it tomorrow in a wrap.. yum!

    Here’s a suggestion for messy wraps: wrap it in a paper towel the way they do burritos! Put a paper towel on a plate, turning it so it is more like a diamond than a square. Build your wrap on top and then when you close it up, pull edges together, tuck in the bottom so that stuff doesn’t fall out, and voila! An easy-to-eat wrap! I like lots of big veggies and salad dressing to mine, and it gets pretty messy otherwise!
