My tummy has had that sort of anxious-blah feeling all day. The feeling where you really don’t feel hungry but if someone handed you food, you would eat. In that respect, I was looking for something comforting and easy to digest for dinner and, upholding my recipe tester status, I looked to Lindsay for inspiration. Sadly, I cannot give away the recipes of these dishes but know that they were awesome and will be featured in Lindsay’s upcoming book!
I made Maple Glazed Vegetables (I used spaghetti squash, white asparagus, carrots, yams and broccoflower and threw in some chickpeas at the end) and, for dessert, Double Chocolate Muffins! Mmmmmmm these guys were soooooooooo good and rich….just what the doctor ordered!!
I have work to do for class tomorrow and laundry to fold, but I plan to relax in a bubble bath and read later on. Have a good night, everyone!

But I think even if eating was the last thing I wanted to do, if I were handed a plate like that of those maple glazed vegetables, I would completely change my mind. That looks SO good. And I’m really full from dinner right now, but I would eat that in a second.
And the melty chocolate chips in those muffins…oh. my. gosh. YUM.

I hope your tummy feels better… Your dinner looks like it was also really great. Maple-glazed anything is awesome: it’s my favorite way to glaze tofu, just a little tamari and maple and yum yum yum.
