Happy Monday!
This morning I started my day with 25 minutes on the elliptical machine while watching the Today show. I had half a banana with almond butter to get my body started, of course, and when I got back inside I had a bowl of cinnamon raisin Ezekiel cereal with the other half of my banana.
I’m excited for lunch today because last night I made something new to have this week in my lunchbox—ED&BV’s Goddess Garbanzos! This recipe was very easy to put together (although next time I think I will only use 2 tbsp and not 3 of the Goddess dressing because it seemed a little wet) and makes enough for 3 sandwiches. I am addicted to this salad dressing by Annie’s Naturals, so this sandwich filling sounds really really yummy. I also packed half of a sliced mango and some peanut butter puffins for a snack later.
I’m sitting on pins and needles waiting to hear from my mom on how my grandfather is doing in surgery. He is going in in about five minutes and the surgery will last until about 1:30. I’m hoping for the best!

April 21, 2008 at 1:09 pmGoddess Garbanzos are by far my favorite recipe in ED&BV. I make it allll the time!! It’s the reason I first bought the Goddess Dressing. I recommend it to anyone to make. =) It’s 100 times better than any tuna salad!

April 21, 2008 at 1:26 pmHi Jenna-I’ve been short on blog reading time after a long weekend away last week and then the catch up that happens when you return from a vacation, but I wanted to let you know that I’m sending positive energy to your grandfather today. My grandma actually had open heart surgery 5 years ago and it was thought to be extra difficult because she also has comprised lung capacity, but she made it through with flying colors. Hopefully your grandfather will have the same luck.
Also, congrats on getting Dexter. He’s adorable and it’s wonderful that you adopted from a shelter.

I love the flax ezekial cereal soaked in hemp milk until it gets nice and soft (banana slices make it even better of course!)
I also absolutely love garbanzos (I always call them chickpeas because I think that term is so cute!) so your sandwich intrigues me. I have a strong aversion towards any type of salad dressing, so I’m not sure I could do this recipe, but I often make a very similar sandwich – just plain mashed chickpeas on sesame ezekial. I know it sounds plain but I really love it! (that, and hummus of course – I love hummus!) Chickpeas are the best ๐
