what’s for lunch?

Last week I talked about dinners. Now, let’s talk lunch!

I’ve said before that if there is a least important meal of the day, lunch is that to me. I mean, I know all meals are important (believe me, I know!), but I’m usually in the middle of cooking or baking when lunchtime rolls around and more often than not, just end up throwing together something super simple and quick to eat.

To help get myself out of a self induced lunch rut, I decided to take some photos of my lunches last week and share them with you. I figure we can inspire each other…and then go eat some chocolate.

Kale salad, gardenburger, cherries, sourdough english muffin with butter

Leftover meatloaf (with ketchup and sriracha), cherry vanilla breakfast cake, sliced pear

Grilled cheese and tomato soup (!!)

Fried egg with sharp cheddar cheese on a sourdough muffin with blackberries

Salmon salad with spicy hummus, pickles and feta on artisan bread with kiwi

To be honest, I think my most typical lunch is a fried egg sandwich! I always fry my egg in a little butter and cook it quickly so the yolk is still a little runny and delicious. I’m pretty sure I could eat fried egg sandwiches every day for the rest of my life and be very content.

    I am so bad with lunches too since I tend to be cooking and in the kitchen! Right now my favorite is 2 slices of whole grain toasted bread, one spread with mashed avocado and another spread with hummus, maybe an egg on the side and some brussels sprouts that are caramelized until I can’t taste their veggie-ness anymore.

    I’m just as bad with lunches…most days I feel like I can’t be bothered by preparing. 🙂 But this week I’ve been focusing a lot on new and FUN lunches that still satisfy me.

    I’m all about the toasted sandwich with goodies inside. Something about toasting the bread feels special. Ridiculous I know.

    Quinoa/rice protein bowls with lots of veggies and some sort of concocted dressing. Of late a peanut butter based dressing.

    Greek yogurt with fruit, raw veggies with hummus- large enough portion to satisfy this belly.

    Those lunches look yummy! I’m a veggie sandwich or salad kind of girl when it comes to lunches. Mostly boring since I have to pack it everyday for work. I sometimes have to bring two lunch boxes because I have so many little things in Tupperware and those suckers take up way too much room!!

    my favorite lunch as of late is a big salad with a fried or poached egg on top and some crumbled goat cheese. So delicious!

    My most typical lunch? That’s a meal that gets glossed over and eaten on the go…and is very snacky! Fruit, veggies, snack bars, whatever i have.

    Your kale salad and garden burger are right up my alley.

    But, your desserts are MORE up my alley 🙂

    My lunches are all over the place. Yesterday it was a salmon salad with blue tortilla chips and today is was spinach cooked with bacon and tomatoes and topped with a chopped avocado. Somedays it’s just a bowl of oats. I used to always make big salads, but for some reason they don’t appeal much to me these days. Probably the cold weather. I’m sure they’ll be back this summer.

    Oh my your lunches are so bright and healthy! If that’s “quick” then I have to rethink things. I have a horrible routine with lunch and need new ideas that are creative. I “know” what to do, but I just don’t do it with work and running around or just laziness…more often the latter…I wish it for the reasons like you and Jess had – that I am too busy baking at home ! 🙂 Oh, one day…

    I work in an office 4 days a week, so on those days I almost pack a salad. Sometimes it’s interesting with goat cheese and chick peas and spices and artichokes and stuff, and sometimes it’s totally lame and boring. On other days I’ll get more creative…but sometimes I just end up eating a bowl of yogurt and cereal and fruit! I do love a good egg sandwich, too!

    I hate lunch…it is the meal I put the least amount of thought into and it shows. Today I had spinch (raw) mixed with olive oil, salt pepper, watermelon raddishes and topped with an organic applegate farms sweet italian chicken sausage. Plus a sliced pear. It was good, hit the spot but not overly exciting.

    I have a lot of tofu in the house, so practically every day last week I would just get a block, mash it with a fork, mix it with light mayonaise, a little mustard, and salsa and maybe add either chicken or tuna (if I didn’t want just tofu), and then toast some extra sour rye bread, and put it on there, with cucumber slices, spinach, baby carrots and a few corn tortilla chips to scoop up whatever of the faux-egg salad fell off the bread ^.^. Putting it in a pita was easier to handle, but on toast, it just made me thing of when I was a little kid (which automatically seems to make it taste better, and worth the mess)

    I tend to eat the same things over and over, but it works, so I’ll stick with it. I usually make a wrap or sandwich for myself or leftovers.

    I like making eggs for lunch, too. When I’m out for the day, I’ll bring a turkey sandwich plus a granola bar for later (quite boring).

    Usually my lunches are whatever is leftover from dinner the night before, but sometimes if I need something that is more “to go” I will have a peanut butter sandwich… which is not exciting at all.

    When I brown bag to work (which is weekday) I bring leftovers from the night before or PB&J along with yogurt, fruit & nuts.

    Otherwise I’ll eat breakfast food all day until dinner on weekends. Cereal, toast, yogurt, granola, eggs etc.

    I normally have a turkey, cheese and mustard roll up with some hummus and avocado with some kind of bean salad or pretzals… and i’ve been loving the fresh cherries that have been on sale lately!

    a big ole salad….but always something different on/in it…Asian inspired with mandarin ojs and beef strips…mexican with black beans, corn, and lime&cilantro…romaine with shredded bbq chicken and some baked beans…It’s hard for me to feel satisfied at lunch without a lotta veg..

    Your thrown together lunches look better than any meal I ever make! Working in an office I often bring leftovers for lunch. But I also always have a few cans of soup in my desk drawer just in case. Boring.

    I’m always looking for easy and interesting lunches since I’m in an office all day. I bring leftovers as much as I can. Otherwise: turkey, avocado and argula on whole wheat or turkey, hummus and cucumber. I also just found these bagged cumin and chili flavored chick peas from trader joes that can be microwaved and they’re great over rice or veggies.

    Usually some cut up veggies (cucumber, tomato, baby carrots and red pepper – not a big lettuce eater) and some type of soup I make on the weekend. But this week I am having something new. Discovered Morningstar Farms Black Bean Chipolte burger at Costco and they are delicious. 2 mins in the microwave, on a whole grain sandwich thin – delicious. Still eating my veggies and fruit too.

    Most days I have a huge salad with whatever assortment of deliciousness is in the refrigerator. I pair that with either a veggie burger or some scrambled eggs. Scrambled eggs and salad may sound like a weird combo, but it hits the spot!!

    My typical lunch is usually really basic. Brown rice and salsa with fruit or veggies on the side. I’m like you. I don’t take alot of time with my lunches. I spend more energy on breakfast than lunch actually!

    my lunches are my most boring meal too. i usually have some combination of the following: yogurt, apple, carrots/celery/veg + hummus, crackers + laughing cow wedge. it’s not usually a cohesive meal and it just a combo of my go to items that i throw into my lunch box in the morning!

    My most typical breakfast is a fried egg sandwich! I have been eating that every day for a few months now… occasionally I’ll have a smootie or savory oats, but a fried egg sandwich with EXTRA sharp cheddar is SO GOOD… Can’t stop… Won’t stop… uhh uhhh uhhh uhhh.

    Lunch is typically a salad with all kinda of veggies and then some type of protein. Lately I can’t seem to get enough canned chicken. I usually use Galeo’s Sesame Miso dressing and then I add pickes and mustard. YUM. Just finished one just like that about 5 min ago.

    I hear you on the “least important meal of the day” point–I never “cook” lunch, so it’s always leftovers or something (usually hummus and veggies) stuffed in a pita pocket, plus an apple or pear…and something sweet to end, of course.

    I agree about lunch being the least important. I tend to just throw stuff together randomly. I love fried eggs too or any eggs for that matter, except pickled eggs. My most typical lunch is soup + salad or leftovers.

    Lunch is my favorite meal of the day ONLY if I can eat at home. When I’m on the run or eating at work, I still like to keep it exciting, but it’s never quite the same.

    I agree with the egg sandwich. I think I could eat it every day and never grow tired of it. 😀

    Fried egg on toast is my most typical breakfast! With hot sauce or sriracha and a sprinkle of salt and pepper. It’s perfect to me!

    My most common lunch is leftovers of whatever was for dinner followed closely by giant but kinda boring salads with veggie burgers and pita bread. I agree with you: lunch is boring mostly.

    I could eat an egg sandwich every. single. day. I usually put Franks buffalo sauce on mine. Mainly I eat leftovers or a sandwich for lunch. Something easy to prep and take to work.

    I honestly throw together a jumbo salad most days, but i am down for trying that grilled cheease and tomato soup.. its one of my favorite meals to make (when i actually cook that it 🙂 )

    I used to be really good at making good lunches for myself. For the last few months I’ve been making crappy sandwiches or even just making quesadillas with black beans. I feel like I’ve lost my love for food. Unless its a burger 🙂 I always enjoy a good burger.

    I hate lunch. It always stresses me out. Sometimes I make a big ole salads. Sometimes leftovers, but never sandwiches really. I get bored with them after a few days.

    Here in MexicoI think lunch is the most important meal of the day and dinner is way less important. We usually have leftovers from lunch or something very simple like a bowl of cereal or a glass of milk! I like to have something light like a salad.
    Your tomato soup looks delicious! I’ll be making it very soon I hope 😉 I love tomatoes so much I like to eat tomato sauce with a spoon!

    Ya, I agree about lunch. I usually have a bunch of veggies with hummus and salmon or eggs. Sometimes I’ll have some quinoa with hummus or brown rice crackers with hummus instead of the protein if I’m not feeling it. I find if I have a “low-carb” lunch (ie. veggies and salmon/chicken/eggs) I don’t feel tired in the afternoon. But sometimes I just want toast with peanut butter or crackers with hummus! Haha!

    I always like to have soups in the winter time. recently, i’ve been getting into salads. I always turn to eggs (scrambled/poached) when I am at a loss as to what to have for lunch. Also, veggie sandwiches are always a good choice.

    No joke, I had a fried egg sandwich for lunch today. Butter on one side of each slice of bread, toasted in a pan until perfect crunchy golden brown, thin layer of roasted red pepper hummus on the un-buttered side, thick tomato slices, and a fried egg. Runny yolk mopped up with the sandwich during the eating process. Get. in. my. belly.

    yeah. i think i could eat one every day too.

    I generally just eat whatever is leftover from dinner the night before. But, if I had it my way, I could eat avocado and fried egg sandwiches daily. I also love cereal with blueberries… er, blueberries with cereal.

    Hi Jenna,
    May I start off with saying I LOVE your blogs!
    I just have two questions. First is I have just recently converted to being a vegetarian and I was wondering what advice you had. Second, You talk about working out all the time and I was wondering if you had any specific workouts you did for your back. I know that is a really weird question but it’s the only thing that I have no idea how to work! Thanks so much!

      Hmm well I think the fact that i love bacon and pulled pork makes me not a very good giver of vegetarian advice….I’m sorry! As for working out, I only do yoga…I quit the gym about a year ago! Yoga helps your back though–I would check it out!

    I feel your lunchtime doldrums. I’m a breakfast and dinner fanatic, however; lunch always feels so rushed! I either make a sandwich with copious amounts of goat cheese, hummus, spinach (or arugula) & tomatoes, plus an apple or grapefruit on the side. Or I grab a handful of crackers and a soup from the depths of my freezer. Every now and again I “treat” myself to lunch. Usually a beefed up salad or sushi..

    I usually have leftovers from dinner. If we have no leftovers available then I will throw together a salad with tuna or chicken and some fruit. Simple and easy!

    no matter how simple or thrown together,you always made them seem so
    appealing and gave me ideas.

    I think egg sandwiches are the only reason why I’m not a vegan. 😀 I used to make a variety of different lunches but I’m just too lazy now! I usually cook up a huge veggie quinoa bowl or lentil+rice+veggie and eat that throughout the week. I hate eating the same meal consecutively usually, but I don’t seem to mind repeat lunches!

    I love eggs for breakfast, lunch, dinner, snack…really, anytime is good with me. Lately I’ve been eating them over diced potatoes (cooked in a little olive oil and onion) with some hot sauce on top. And slightly runny yolks, of course! Mmmm.

    Sandwiches are my all-time favorite lunch though. It doesn’t matter what kind, just as long as it’s on a piece of really good bread!!!

    By the way, your tomato soup recipe caused me to drool a little on my keyboard. I think I know what we are having for dinner tomorrow night 🙂

    My most typical lunch is an almond butter sandwich with veggie sticks on the side. I have this lunch almost every day. I definitely need to change it up! Maybe I’ll try one of your recipes tomorrow 🙂

    I’m pretty much the same way with lunch! I tend to do a smoothie because it’s fast and easy. Banana, strawberries or blueberries, spinach, protein powder, sometimes cocoa powder, avocado, blended up and down the hatch!

    I eat egg sandwiches for lunch too, but I don’t like my yolk runny. Other lunches are leftover soup, big salads, and hummus, with veggies and a whole wheat pita. I agreed that lunch is probably my least favorite meal, first comes breakfast then supper.

    Oh I’ve been so lazy about packing a lunch for work lately…I just run out of ideas! Plus I’m usually (always) running late in the morning and don’t have much time to pack a lunch. I typically wind up at Oliver’s market creating a huge random salad from their wonderful salad bar. All the comments here are giving me lots of ideas though…

    My typical lunch is soup, bread, and fruit. Any lunch that I can make once and then eat all week is really appealing to me. Also, it’s easy to eat several servings of veggies via soup. I usually make a big pot of soup on Monday and then heat up bowls all week so that I don’t even have to think about it. I’m with you, lunch is the least exciting meal of the day for me! I try out a new recipe almost every night for dinner, but I don’t have time for that during the day!

    I also love eggs for lunch, but only do that when I am home at lunchtime.

    I feel the same way about lunch. It’s the one meal that I just would rather forget about than take the time to put something together. Even when I have the time it’s just not what I want to be dealing with. Most days I throw together a simple salad, eat leftovers, or make an omelet. It does the trick without weighing me down.

    A sandwich, a yogurt, a piece of fruit. My lunch is very predictable!

    On the weekends though I like to do something different. Egg sandwiches are at the top of my list then!! 🙂

    Your lunches look great! I always fix something I can eat on the go since I’m always walking to another class around lunch time – usually a sandwich. If I’m at home, I usually have fruit, salad and some kind of carb.

    I am loving all these great lunch ideas! I work in an office, and am constantly trying to think of new things to bring for lunch. Here are my go-to’s: salads, pb&j, tuna salad (or chicken or egg salad). Egg salad with ‘Mary’s Gone Crackers’ is delicious (I also really like those crackers with peanut butter). Hummus w/ veggies, shrimp cocktail, homemade burrito, soup (homemade or Amy’s canned), sunshine burger topped with a wedge of laughing cow cheese, or my favorite….leftovers! 🙂

    I usually end up with the ab&j sandwich (I don’t like peanut butter) and some fruit. Maybe some candy or a cookie. It’s sooooo boring. My favorite meal is breakfast. Lunch just makes me yawwwwn.
