Being Nice To My Tummy

Good morning and happy Friday to you!

I can’t believe two weeks have passed since the accident. What a blur! Two weeks ago right now I was at work, not thinking ANYTHING like this could ever happen to my family. Crazy.

This morning I learned my lesson from yesterday and had a more digestible breakfast before my workout

Enter “chocolate chip” breakfast cookie! I used these raw cacao nibs as the “chips”—

And also used 1/2 cup oats, 1/2 banana, 1/2 scoop Sun Warrior protein powder, 1 tbsp raw almond butter and 2 tbsp vanilla coconut milk.

The chocolate chips made it though! I LOVE these nibs because it is like eating chocolate in its healthiest form. Each nib is packed with antioxidants, phytonutrients, vitamins, essential minerals and is sugar and dairy free. Finally, an excuse to eat your chocolate for real! Plus, they give you a nice little kick. I haven’t had coffee in weeks (instead I just drink a huge glass of water first thing) and these nibs give me just enough zing to get going!

A breakfast cookie made with a half cup oats instead of 3/4 cup oats is not going to keep me full for very long so it works perfect as a pre-high intensity exercise breakfast. I’m off to spin class this morning….a little nervous because it is the most intense spin class my gym offers! Eek!

I do love cacao nibs… i haven’t ever tried them in my bfast cookie though, so I’ll have to do that.

Woa! I’m on my way to spin too!! I’m a little embarrassed to admit but…it’s been 2 months since i’ve gone! eeeeeek. I am so excited but I know it’ll be so difficult to get back into that groove! Happy Friday:)

I’m going to try your combo when I next make a breakfast cookie. The first time I made it, it was totally soft and I had to put it in the microwave (which basically ended up being a bowl of oatmeal!). I like the cocoa addition ;)

Good to see more buzz about including chocolate with breakfast, even if it is just the tiniest bit. I’m all for it!

Your breakfast cookie looks delicious! I keep wanting to make one, but I always think I’ll change my mind in the morning and want something different. I would love to try those cocoa nibs – I wonder if my health food store would have them?

I love those nibs too! I’ve found that grinding them up in my spice grinder makes the best cocoa powder and is actually cheaper than buying the raw cacao powder.

i have yet to master the famed breakfast cookie, but i am jotting down combos i see out there so i can try them when i recover from my tonsillectomy. i LOVE this combo cause duh, it includes chocolate chips :) thanks for the suggestion. where did you snag those nibs? also good work on no coffee for so long, that is impressive.

Another good thing, I am sure you have tried it, Peanut Butter Co’s, Chocolate Dreams. OMGosh IT IS SOOO GOOD. I was eating it out of the container last night. Opps.

Mmm, I love the bitter, real chocolate-y flavor of cacao nibs! They’re especially good in/on vanilla/coconut ice cream. :)

This might sounds weird but I just love moving in somewhere cleaning it from top to bottom and reorganizing. I just about made my poor boyfriend crazy when I first moved in with him! lol have fun with your mom!
