dive into summer

…with some of my very favorite summer recipes!

Some are mine, some are yours….all I totally love and want to eat all summer long. mmK?

Zucchini Pizza! If you haven’t tried the combination of shredded zucc with ricotta cheese, well, you should. Tonight.

Try a Classic Caprese Salad for dinner when it’s too hot to be in front of the stove….

And I have this protein power goddess bowl by Oh She Glows on my favorites list to make next week, actually. Love the looks of that tahini dressing!

This Chickpea, Mango and Cucumber Salad is perf. for steamy summer afternoons.

If you haven’t tried this Mediterranean Quinoa Salad, you’re crazy. It’s been one of my lunch staples for weeks. Well, that and Stoup. But just because I like saying “stoup”.

While you’re at it, try these margaritas. They kinda changed my life. Then make a crumble with the leftovers!

How Sweet Eats Portobello Burgers kinda look better than beef burgers…and that’s saying a lot. I want. Now.

Sorry! Can’t talk! My mouth is full of cranberry bran muffin…as I release one of the most attractive photos of myself ever on the world wide web.

NOT.

This, on the other hand, is much more attractive.

And might just be better than a margarita. Well, maybe not. But it won’t give you a hangover…I can assure you of that!

Still hungry? Try this Edamame Dip from the lovely Aggie over at Aggie’s Kitchen! That won’t give you a hangover either…but it will taste mighty fine on some blue corn chips with a healthy dose of guac. on top.

Yum.

Wishing you a safe, happy and delicious Memorial Day!

That bowl of cherries pretty much encompasses my favorite thing about summer…the fruit! I just bought some amazing dark cherries from Whole Foods yesterday, and have already devoured half the bag. Fresh cherries are the greatest. But so is guac. And I’m bookmarking that zucchini pizza! I love how the zucchini is grated instead of chopped and scattered on top like most vegetable pizzas.

I tried to make the protein bowl yesterday. Oh. my.gawd. I love ohsheglows, but that dressing was the most gag-inducing thing to come out of my kitchen yet. Just the smell of it made my stomach turn. Gross. Cooked lentils with sauteed veggies? Yes, yum. Dressing with nutritional yeast? ABSOLUTELY NOT. You’ve been warned. 😉
