Breakfast/ Lunch

Here and Gone

Hi everyone!

Wow, what a day! Our alarm failed to go off this morning so we ended up sleeping in until 9! Not that I’m complaining because I needed the sleep but poor Ryan was late for work. I quickly made a bowl of oatmeal on the stove using 1/2 cup oats, 1 cup skim, 1 banana, peanut butter and some brown sugar:

This bowl of oatmeal didn’t taste good to me at all! Crazy! I blame that for using skim milk instead of my beloved Silk Light Vanilla. Silk adds just a touch of sweet vanilla flavor and the milk was just…..blah. I ate it, but it just reminded me why I am a soymilk fan!

I rushed from our apartment to my parent’s house to say bye to them (I won’t see them again until Christmas!) and after that, it was about lunchtime and since there is NOTHING to eat on the 2 1/2 hour trip across the state of Florida, I stopped at the health food store near my parent’s house and grabbed a hummus, kale salad and quinoa tabbouli wrap to go!

Along with a perfectly sweet honey crisp apple!

I actually made pretty good time on my trip despite a huge detour. I HATE that! I got back around 2:30, stopped at Publix to grab some yogurts for the week and came “home” and just had a little snack:

I feel so blah today! I know its because I left again and I’m so tired of having to always leave! 🙁 Ryan is coming here to visit though the weekend before Thanksgiving we think, which helps because this is the first time ever I won’t be able to go home for Thanksgiving…..I’m working a 12 hour shift!

I think I’m going to pull myself together and head over to the gym for a little while. That always makes me feel better! I hope yall are having a great Monday and I will check back after dinner!

Aw, I’m sorry Jenna… it must be hard being apart from Ryan. You’re doing such a fantastic time with your baking though – and the weekend before Thanksgiving will be here before you know it! 🙂

    Lunch looks delicious!

Hooray for Ryan visiting you before Thanksgiving – it’s tough being away from family at holidays (especially for the first time). But you’ll make it through!

Jenna, you have such a positive spirit, even with the Monday blues! Hang in there, it will pass! Aren’t honeycrisp apples the best!? I had one last week and it was the best apple I’ve ever had 🙂

Aw, I empathize with the long-distance relationship blues… It stinks! BUT, good news is, next Thanksgiving you can make your family a fantastic feast out of what you learned this year! I can’t wait to see the baked goods you and Adam will make! Cheer up…

This will be my first Thanksgiving away from my home/family as well. Plane tickets are too expensive and I thought it would be a little much to fly home twice in two months (going home for Xmas). We’ll make the best of it though! 🙂 And I’m sure you’ll have some deeee-licious food to make and eat that day!

Jenna – I read your blog often but I think somewhere I missed it – how long are you away from your fam and your boy? When do you get to move back there? Long distance sucks, my guy lived 800 miles away from me for 8 months! But now we live together and it’s nice waking up to him every day! (usually, ha ha) Keep your spirits up!

Hey Jenna I have an idea maybe you could make a little thanksgiving dinner for you and Ryan when he comes down maybe that would help you to feel less lonely and more festive. I know you love to cook (like me) and thats what I would do. Youre a tough girl with a lot of determination I know you can get through this!! 🙂

Aww, hang in there. Long distance is so hard and Monday-departures make it so much harder. I think there is just something extra sad about leaving on Monday. Hang in there.

I totally understand the hating to have to say goodbye and leave all the time. I’m in a long-distance relationship with my boyfriend so I can totally relate. You are always so positive though, so keep it up! Sometimes it’s almost easier to just be apart so you don’t have to say goodbye! Hang in there 🙂

It is always so hard to leave! I think the worst part is actually saying good-bye. Once you’re back home (and back to being busy) it’s not quite as terrible . . . but that good-bye is so awful 🙁 I’m lucky that I drive with a friend who also has a bf in Gainesville so we can distract each other the whole way back to Miami!

When you’re away from Ryan, how often do you talk to him on the phone? (time wise/ per day). I’m in a long distance relationship, and sometimes I’m not sure if our communication is “sufficient”.

    Nat,

Well…..let’s see…..maybe two or three times? It just depends on whats going on. We don’t have like a ‘set time” or anything like that. I would say most usually three.

Totally unrelated to this post but I had to share-
I just made brown rice and lentils with lots of sriracha (sp?), just as you used to eat a lot. I put in lots of spices and seasonings, and loved it! However, it was so spicey that my nose started to run (!!) so I grabbed the tub of plain yogurt and splashed on a dollop. OMG it was divine. It cut the spiciness perfectly and made the dish reminiscent of all the yummy goodies I had while in Turkey a few years back. Everyone should try this because its A) delicious B) Cheap and C) incorporates lots of food groups, nutrients, and is low cal
