NCLB II

Today was clearly the No Carb Left Behind Tour….part II.

Caitlin and I had a perfectly lovely day of laying around and eating everything in sight. Why can’t every day be like today? I snacked on some millet toast with earth balance and jam:

And then we had an early dinner of the homemade four cheese stuffed shells that I pre-made on Thursday night (and froze). I’ll post the recipe next week—promise! We also had roasted broccoli for some veggie lovin’

And then we decided it was pure genius to go get Coldstone. I haven’t had Coldstone since COLLEGE! Be still my heart.

I got a small cake batter with oreo and caramel sauce. I practically licked the cup clean. And then drank a gatorade cause that’s how I roll.
Speaking of rolling, the alarm in this party house is goin off at 5:15 tomorrow morning. Caitlin’s dad is picking us up at 5:45 and we are driving the hour to Napa to the race start. We’re meeting some fun bloggies while stuffing our faces with bagels and cream cheese and then the event officially starts at 8:30. There’s rest stops every 20 miles and, don’t you worry, I’ll be twittering. Read at your own free will though. I can’t guarantee what my thought process will be like after five hours on the bike. It might get dirty. Just sayin’.

COLDSTONE!! I am so excited because they just opened one up near me and naturally, I got peanut butter with reeses and it was AMAZING. cake batter is definitely next though!

Cake batter + oreos = best ice cream EVER!!! I got Twix last time, which wasn’t a great idea, because the chunks didn’t mix in well with the ice cream. I obviously spent time analyzing this ;-)

Those shells look great! I can’t even remember the last time I went to a Cold Stone…I over did it on their Birthday Cake Remix and after that I only wanted my favorite plain old chocolate-vanilla twist soft-serve with rainbow sprinkles or mint chocolate chip.

I love Cold Stone and I swear I eat there like once a month. I normally get their sinless sweet cream with some sort of topping. BTW, good luck and have fun!

Endorphins, seratonin and all that other healthy stuff aside, one of the greatest benefits of exercise – especially extremely long distance-related activity – is the excuse to eat copious amounts of carbful deliciousness. And Coldstone. Copious amounts of Coldstone, anyone :)?
