Today was clearly the No Carb Left Behind Tour….part II.

Caitlin and I had a perfectly lovely day of laying around and eating everything in sight. Why can’t every day be like today? I snacked on some millet toast with earth balance and jam:

And then we had an early dinner of the homemade four cheese stuffed shells that I pre-made on Thursday night (and froze). I’ll post the recipe next week—promise! We also had roasted broccoli for some veggie lovin’


And then we decided it was pure genius to go get Coldstone. I haven’t had Coldstone since COLLEGE! Be still my heart.

I got a small cake batter with oreo and caramel sauce. I practically licked the cup clean. And then drank a gatorade cause that’s how I roll.
Speaking of rolling, the alarm in this party house is goin off at 5:15 tomorrow morning. Caitlin’s dad is picking us up at 5:45 and we are driving the hour to Napa to the race start. We’re meeting some fun bloggies while stuffing our faces with bagels and cream cheese and then the event officially starts at 8:30. There’s rest stops every 20 miles and, don’t you worry, I’ll be twittering. Read at your own free will though. I can’t guarantee what my thought process will be like after five hours on the bike. It might get dirty. Just sayin’.
