Thanks for all the sweet 5K comments! The race actually went really well, considering there were 20,000 people there! I finished in 27 minutes and am very happy with that time because I know I gave it 100%. I think I could have gone faster but there were kids everywhere and it made it really difficult to keep a steady pace! Around mile two I felt someone come up beside me and looked over to find RYAN running along the grass, camera in hand, trying to get an action shot! How funny is that?! After I race I met up with Caitlin and Meghann (both of which are ROCKSTARS for already running a 15K this morning!!) and they just looked so darn cute in their running skirts. We all talked for awhile and then we made the long walk home (about another 2 1/2 miles). Before the race I guzzled coconut water and I swear it gave me more endurance! I usually do walk/run ratios but today I basically ran the entire time (except for a brief 20 second walk break around mile two) to keep up a decent 9 minute mile the whole way. My shins felt sore in the beginning but I just zoned out to Rocky and Last of the Mohicans music and ran through it all. Overall, a very successful first 5K and I would definitely do more in the future although I still think I prefer the 10K distance because then I can pace myself more.
When we got back to the condo it was already around 11:00 and I was having a MAJOR burrito craving (random!). So, Ryan and I set out to Moe’s to get something fast. I got my usual—a moo moo mister cow (kid sized burrito) streaker with tofu, black beans, rice, guacamole, salsa, hot peppers, cucumbers, cilantro, cheese and black olives!
I know it looks big but it was actually TINY and sadly I am still hungry after cleaning my plate! I think he put only like four tiny cubes of tofu on it and like 2 tbsp each of black beans and cheese. I guess that’s why it is only $2.99 and a kid sized portion. I know for next time!
I also got a sweet tea to celebrate the race!
And went to town on Ryan’s chips—

The weather is phenomenal outside and we are about to go head out by the pool to relax and get some sun all afternoon. For dinner, we are going over to my house and my mom is making another slow cooker masterpiece!

Moe’s has really been skipping on ingredients lately – I generally get the same thing you get (minus cheese) and love them because they offer tofu, but last time I got the vegetarian burrito (because the kids doesn’t fill me up anymore) but I still get like 5 cubes of tofu and barely any beans. Total rip for $5+! I’m now a Chipotle convert – black beans, fajita veggies, guac, corn salsa, green salsa, tomato and lettuce for $5 and it’s huge so I always have leftovers!

I have one that is terrible and it’s really discouraging me on the slow cooker. I swear almost every recipe starts with a pound of ground beef and a can of mushroom soup.

We LOVE the southern living slow cooker cookbook. It is the best ever!!!! My mom also has a super healthy slow cooker cookbook that Ryan actually gave her for christmas a few years back. We are going over there tonight I think, and I will look what the name is. As for the run—my shins actually felt fine! I felt a little discomfort during the first mile but I think all the adrenaline of running with 20,000 other people got to me and I felt great. I stretched a bunch afterwards but I’m really positive and optimistic to some pain-free runs in the future now!
