Halfway done until the weekend!! I’m bringing Dexter home with me tomorrow to show to my dad because he hasn’t seen him yet. Dexter will probably meet Mikan as well so hopefully the two of them can become friends, not foes because I’m sure there will be times when Dex needs to stay at my parent’s house.
My lunch was sooo good today and I actually only ate half of the piece of bread with hummus because the soup filled me right up! So smooth, creamy and comforting. My favorite. For dinner tonight I decided to put a twist on my favorite and use the leftover chickpea cutlet from the other night to make……….nachos! I chopped up the leftover cutlet and put it over 2 blue corn taco shells (these are available from Whole Foods and they ARE much healthier than traditional white tortilla chips and contain no trans fats) and romaine lettuce. I drizzled the queso sauce, guacamole and salsa on top and had some steamed broccoli on the side.
I think this might win for the BEST way to eat chickpea cutlets yet!!!!! The sauce! The sauce! I am absolutely in love with this queso sauce!!! It would be fabulous served as a fiesta dip at a party and come football season, I will be making it for when the Gators play (Ryan’s team)! This meal tasted soooo good you might think it was too good…but it was seriously healthy!
Um yeah. Can you really resist that?!
I’m off to my practical. The list of stuff to present tonight seems rather easy and I’m thinking (hoping) we will get out early. I’m debating whether to bring a muffin or a super-charge-me cookie with me for later….they both are so good I can’t choose 😉

You’ve inspired me to become a vegetarian (sorry, couldn’t quite make it all the way to vegan :)), so I took the 30 day pledge at goveg.com and I’m on day 5 and I feel great!!! Obviously, those of you who have been vegetarians forever might scoff at that, but you have to start somewhere! Thanks for being the best!

I don’t know if you saw my question yesterday but I was wondering how much chickpeas you use for a serving of your tacos (the type you ate last night). Do you make or buy canned chickpeas?
Also, what brand is the brown rice cake? I have never seen brown ones.

A serving of chickpeas is 1/2 cup cooked and that is usually what I eat. I cook my own because its more economical than buying can after can. Plus, i think they taste better that way. Brown rice cakes are everywhere at health food stores! I think mine was 365 brand maybe? That’s the whole foods brand. I really like them…
