Muffin Mania

Happy Friday!

I took a break from the gym this morning to just relax a bit. I had breakfast, sat on the couch while enjoying my coffee, played with Dexter…I hate rushing in the morning! For breakfast this morning I made a smoothie using 1 cup soy milk, 1 banana, 2 tbsp flax and some frozen peaches and blackberries. I also ate two muffins on the side. I started with just one then I kept picking at them so I decided to just have another. I probably could even go for a third (I’m not that full?) but I stopped myself. Smoothies are weird. Sometimes they really really fill me up and then sometimes they don’t…even when I use the same mix of ingredients. Strange.

I’m excited to have leftover soup for lunch today! This soup was soooo delicious, creamy and filling. I need to make it again soon! With my soup I’m packing a slice of homemade whole wheat bread with hummus, some fresh cut melon and, for later, a brown rice cake with almond butter and raspberry jam.

I was pleasantly surprised to get out of school not at midnight last night, but actually fifteen minutes early! We finished off our petit eclairs, made battenburg torte (almond cake that is two-toned pink and yellow, sandwiched together with apricot jam and rolled in marzipan) and made our doughs for tonight’s practical. Tonight I’m making more icebox cookies, madelines and almond macaroons. We are also starting the jaconde sponge cake for our Opera Torte (sponge cake with layers of ganache, opera syrup and coffee french buttercream…very classical and rich).

    I love these muffins, too! I just made them and can’t get enough!! You’re so right, puting them in the fridge makes them even better. I toasted mine in the oven last night for just 10 minutes and spread some apple butter on top, FAB!!

    so i tried one of the larabars for a snack yesterday (the chocolate pecan one) and they filled me up sooo much. I’ve never been so full from a snack before…I usually have a yogurt with granola or a luna bar for a snack mid-day. Does anyone get really really full from them? I was a bit uncomfortable and needed to take a walk lol I didn’t care for the taste that much at all so don’t think I will be buying it again esp. because my stomach felt so weighed down from that one bar. strange.

    I spray the muffin tin with a high-heat canola spray so they won’t stick. It works very well!

    I do find that smoothies fill me up when I combine them with other foods like whole grains. I couldn’t just have a smoothie in the morning because my body craves carbs! I’ll have a smoothie with a muffin, some toast, an english muffin….and then it usually fills me up pretty well. Just a smoothie made with fruit goes straight through me though!

    Made the carrot cake cupcakes last week and couldn’t stay out of them! Can’t wait to try these apple ones. Yum.

    Question: How do you get things like bread w/ hummus and a rice cake with almond butter to stay neat and intact when you pack it? My long workday and commute means I pack everything I eat all day long except dinner. Open faced things or PB on fruit always seem to totally fall apart by the time I get to them! I always have to fold the bread or pack the hummus/PB separately, which is a big pain.

    I love that it’s smoothie time here in Boston! The weather is getting nice which means smoothies for breakfast and dinner on the patio!

    Hi Jenna! Question- do you find that a smoothie plus whole grains is more filling than your oatmeal breakfast?

    Also, do you make your smoothie in a blender w/ frozen fruit? It looks so pretty!!

    Jenna, I have a FABULOUS smoothie concoction that I’ve been drinking all week, and it keeps me full for 5 hours, on its own!! If you’re interested, I’d be happy to share it :0)

    Hi Jenna, I was going to make those super charge me cookies tomorrow and I was wondering if could use white whole wheat flour instead of spelt flour and if it would make a difference if I left out the coconut? (if I leave out the coconut should I add something else?)

    Veggiegirl-I would love to hear your smoothie concoction! I LOVE smoothies but they never keep me full for longer than an hour or two. Whatever you’re putting yours to keep yourself full for 5 hours I have to know

    Jenna-you’re baking looks delicious (as per usual)! I don’t know how you don’t devour every single morsel of what you’ve made.

    VeggieGirl, as a fellow smoothie-loving vegan, I would love to see your recipe! If you wouldn’t mind posting it that would be great! I currently make a smoothie nearly everyday from various organic berries and flax and/or hemp, but I’m always searching for new recipes. We have the same food philosophy so I would love to try your recipe. Thanks so much! 🙂

    Here’s my smoothie combination! :0)

    VeggieGirl’s Satiating Breakfast Smoothie Deluxe

    – 1 cup hempmilk

    – 1 banana (fresh, not frozen)

    – 1 cup blackberries

    – 2 Tablespoons strawberry-almond butter (yes, strawberry-almond butter, the greatest invention ever – I buy it here; and it’s also where I buy my hazelnut-butter!):

    Blend all ingredients until smooth (I blend it twice, to thoroughly grind the blackberry seeds). Enjoy!

    It does get really messy. the hummus more-so…I find that the tin foil I wrap an open faced almond butter sandwich in repels the almond butter actually though so it doesn’t stick on the foil!

    They both fill me up the same I think…but only when I combine a smoothie with some sort of whole grain. The soy milk blends up right with the frozen fruit to make a creamy, tasty treat! Frozen bananas are the best!

    I really am not sure about this one……I think you would just have to play around with the proportions because I’m not 100% sure on the exchange rate. Regarding coconut, you could def. leave this out without a problem!
