A Rushed Day Turns Better With Kale

It’s def. one of those days where I don’t even have time to stop and breathe!! Work was crazy because of the huge event (with 150 people) that went on there today and I felt like I got nothing done because the restaurant was so loud and no one could hear me when I made phone calls. I rushed home to make something quick to eat, change and grab my stuff and now I’m out the door again til midnight for school!!! When is summer break??!?! Oh yeah! I don’t get one! (that’s technically a lie—I get a week off at the end of June…but not the summer breaks I’ve been having for the past 22 years!)

Because of my rushed day I didn’t have time to really make dinner tonight for myself. That’s okay though because instead I got to try out the new Amy’s veggie burgers (California style—they were really really good….one of the best veggie burgers I’ve had!) that have been sitting in my freezer unopened for weeks!!! I heated one up and served it on an Ezekiel english muffin with melted FYH cheese (I’ve determined that the microwave is the BEST method for melting this stuff!) and ketchup… and on the side I had some blue corn chip crumbs (the last of what was in the bag), a sliced pear and…………KALE CHIPS! All I can say about “kale chips” is why in the world has it taken me so long to make these?!!!!!! These things rock! I let them cook for about 10 minutes in a 350 degree oven sprinkled with just a little sea salt and they came out absolutely perfectly. Crispy, salty and light as air. I wish I would have made more instead of eating regular tortilla chips! I will def. have to make these again soon. I have a new addiction 😉  I’m also bringing my last double chocolate muffin with me to have as a late night snack.

Okay guys, I have to jet! I LOVE having a busy/full schedule but I just feel like sometimes I need a bit of a break! oh well! I guess I’ll have a break next year at this time when I’m done with school and all settled back home with Ryan. As for right now—its off to school to work on my practical!

    awww, Jenna you are like the energizer bunny – you keep going and going! 😉 I can totally relate to you – I too have no summer break (just a short week off in between the end of spring semester and the start of summer classes) I’ll be taking a full load of classes all summer long. So at least you know you’re not alone! Being busy can be good, but it can also really wear us out. I definitely feel like I’m always trying to catch my breath. All this hard work will eventually pay off though – just keep that in mind!

    Amy’s California burgers are definitely tastey. Glad you ate a nutritious dinner before running out to school tonight. Hope you have fun in class! Get some good sleep tonight if you can 🙂

    Definitely take some time to breathe, girl!! I wish that your schedule could be less hectic :0( But hey, tomorrow you get the day off!! Hooray!! :0)

    Those are the only Amy’s burgers-variety that I’ll eat – they’re so flavorful, and have a wonderful texture!!

    Kale ALWAYS makes one’s day better – at least, it always makes mine better :0)

    I have to agree: Amy’s Calif are my absolute FAV!!! (I love the non-soy protein isolate-ish ingredients, too!)

    I’m going to try the kale chips. What a cool idea.

    kale chips are SUPER easy: chop up some kale, throw it on a baking pan that you sprayed with some olive oil (or whatever cooking spray you have), salt & pepper (or not…but def do salt), toss it around, more oil if you want…then bake at 375 for about 10 minutes and you’re good to go!! they’re DELICIOUS

    It took me a while to make the Kale Chips too but after the first time I did and after I realized how easy they are- They are a staple side dish for me now!

    Wow–sounds like a busy day for you! I definitely know what that feels like. But it’s actually kinda fun to be up on your feet and running around all day–if it’s a once a while kinda thing, of course. I hope you can find some time to relax as well though!

    I’ve never tried kale chips ever–but I’ve been seeing them everywhere so my curiousity is now peaked after seeing your post!
    And yum–veggie burgers and english muffins! Two of my favorite things~

    am I the only one who doesn’t like kale? i’ve tried it steamed, fresh and in the oven the only way I can eat it is mixed in soups…what’s wrong with me? haha

    It seems that you have really gone vegan for the most part. Have you really given up your seafood???? I used to love to hear about your yummy seafood dishes. Well, whatever you feel is best for your body. I used to be vegan for 2 years and vegetarian for about 12 more, so I know it does make you feel good. I still eat mostly that way, but eat meat with my family at night for dinner, which I am ok with now. It is good to hear some new dishes that I might not have ever thought to make before. You get tired of the same old things, so keep up the good work with the blog!
