An Eggie Sammie

Hi beautiful bloggies,

Of course I feel much better after exercising today. Its as if I sweat out all my funky monday feelings right there in BodyPump! I arrived early and warmed up with 15 minutes on the elliptical. The gym got all its new December magazines in so the time flew by πŸ™‚

When I arrived home later, I made a quick eggie stuffed pita for dinner.

I scrambled one egg + one white together with salt and pepper and stuffed it into a warm whole wheat pita with spinach, hot sauce and a light laughing cow cheese. Yummy red grapes on the side! It was delicious and made me want to make egg sammies for dinner more often.

I fiddled around, de-seeded two pomegranates and packed my lunch for tomorrow before breaking out some dessert. I wasn’t even that hungry but my sweet tooth tells me what to do, clearly. I had a small cup of my vanilla coconut milk ice cream with a macaroon. Perfecto.

My “parents” are going out of town tomorrow for the remainder of the week so I will be all alone! I did buy all the ingredients today though to make a really good dinner for myself tomorrow night. Something other than eggs or veggie burgers to keep the blog lively for you! Sometimes I feel like my eats are just so boring!! Oh well. It’s real life. Hopefully I make up for it by smearing almond butter all over my face and putting the pictures on the internet.Β 

I’m off to catch up on some emails then hit the shower and bed.

    gym classes are so great! I feel like all the other people pumpin’ it up and working out make it a little more lively and get you in the spirit! I had a similar lunch too, eggs are so solid πŸ˜€

    I need to try that ice cream! I had the coconut milk yogurt, so I can only imagine how delicious the ice cream is!

    This sounds random, but I know you like to ask questions sometimes and I thought of a fun one that you could ask tomorrow for the holidays and that’s food related of course πŸ™‚ Everyone eats turkey for thanksgiving dinner, but what is everyone’s traditional christmas dinner main course? Ham, turkey, goose, duck, etc? It seems to vary so much!

    i eat boring a lot as well.. which is why i dont post up the fact that i eat Amy’s Chili 3 nights a week.. !!

    I do not think that dinner is boring. I looked at it and wanted it immediately.
    My funky Monday feelings are still here. It’s Tuesday, so that can’t be good.

    On nights where my husband is at class, I make a scrambled egg sandwich with 1 egg, 2 egg whites on a Thomas Light with ICINB spray and jam. I know it sounds gross, but I love jam and eggs!

    I seriously need to try that ice cream!! You’re meals certainly aren’t boring by the way… you eat healthy, tasty meals everyday – that’s certainly something tons of Americans do not do. Trust me… I walk by a Burger King on my way to work every morning and see people ordering breakfast. Seriously? Gross.

    I love your website- can’t wait to keep reading! Have you tried the coconut milk icecream in any other flavors? I saw that they had about ten flavors at Whole Foods and I wasn’t sure what was the best…although I do loooooove coconut!
