Good morning everyone!
ย Well, we experienced about a 40 degree drop in temperature overnight! It’s freezing out there (well not technically freezing for all you northerners but cold enough for us Floridians!)—I think the temperature is only 40! Ah! I actually had to turn the heat on!! I hope it stays a little chilly for awhile though because it makes it feel more like the season…last weekend I was laying out by Ryan’s pool. I’m not kidding!
For breakfast this morning I just made peanut butter steel cut oats with a banana in it. Yum! I don’t think I cooked the oats long enough though the other night and they were a bit on the soupy side but still quite tasty. I know now to always cook until very thick! On the side, I drank a mug of Tazo Awake tea. My breakfast calories this morning were 361.
I don’t really have too much planned for today…my roommate is leaving again to go home for awhile to work 0ut a new job situation so that leaves me to fend for myself! I have to run to the store to pick up an ingredient for dinner tonight, want to do some cardio at the gym, and have to work tonight at around 6:30.
I do have an interesting dinner planned out for tonight….something I wouldn’t normally make but I love the cookbook and the recipe actually sounds good! You will have to wait and see what it is though! ๐

January 2, 2008 at 2:43 pmI just started reading your blog and I love it! You can tell you are a english major, your descriptions are great to read ๐ I read the post about the times that you typically eat when you are a student. I am a student too, and I have a question regarding your snack times. How do you make it from 9:30 to 1 before eating lunch with only a snack. My snacks only seem to satisfy me for a much shorter period of time. What type of snacks do you eat that hold you over so long?

January 2, 2008 at 2:51 pmHi susan
Well….it’s hard!! I usually have a big breakfast before I go to school, then when we get a break around 9:30-9:45 I eat usually eat a snack of almonds mixed with fiber one cereal. I make little baggies consisting of 7 almonds mixed with 1/4 cup fiber one and stuff them into my chef pant pockets ๐ I have found that these snacks actually keep me full because its a mixture of complex carbs + healthy fats. I’m always very hungry when school is over at 12:30…then with traffic….don’t get home til 1:00 to eat. Now, because I am in culinary school I do have little “tastes” of things I’m cooking…a taste of a sauce here and there. nothing major that I would count as an actual snack because its so small but seriously being so busy and around food all morning keeps my mind off my hunger! When I was in college and didn’t have to always pack a “portable” snack in my pocket (haha) I would usually have a yogurt and some fruit or 1/2 a clif bar or something in the morning between classes if I could come home. If your snacks aren’t satisfying you for very long I think you should increase them to be a larger size or include nuts, which are very filing! A handful of hazlenuts, almonds, brazil nuts are so good for you and fill me up for awhile…I LOVE the KIND:fruit and nut bars I find at whole foods that are JUST nut bars..with a little honey. nothing artificial! I snack on them in the afternoon sometimes. You just have to think of combining nutrients such as protein/fat/carbs to make a filling snack that will last you till your next meal.
Here are some of my favorite afternoon snacks:
1/2 cup cottage cheese with 1/4 cup flax granola
Apple and 1 tbsp peanut butter
kashi crackers with 1 tbsp peanut butter and jam
1/2 cup plain yogurt with jam, fruit and crackers
smoothie made with yogurt, milk and fruit
nut bars (like I mentioned)
cappuccino and an apple ๐
hope that helps!!! ๐
