Counting Down

Happy Friday, folks!

I have 48 more hours in my workweek but I am counting down….

Even though I don’t have to be in until noon today, I still woke up just as the sun was rising at 6:15. Oh well. Early bird gets the worm I guess πŸ™‚ Okay that was dorky. Moving on! This morning I had pumpkin pie overnight oats!

This combo was made up of:

1/2 cup oats soaked overnight in 1/2 cup water and a pinch of sea salt

1 spoonful almond butterΒ 

1/3 cup pumpkin

1/2 cup HOMEMADE greek yogurt

dash of “gingerbread sugar”

drizzle of pure maple syrup

Β The greek yogurt that I “made” yesterday was so thick I could hardly mix it! Much thicker than Fage even. I think I have about 3/4 cup left, so I guess in total, I made 1.5 cups from 32 oz of plain nonfat. Regardless, the oats were suuuuper creamy and delicious this morning!

Now I’m blogging and drinking some black coffee. It’s funny because for the past, oh 6 years, I have gagged at the thought of black coffee…but now I think its actually good! Who am I?! It all went down right after I used the last Stevia packet and refused to use Splenda. I took a small sip of the black stuff, thought “this isn’t SO bad” and then the rest is history. Weird. Now sweetened coffee tastes nasty to me!

I’m off to digest breakfast then hit the gym for upper body strength! See you in a bit! πŸ™‚

Oh! And thank yall SO much for all your great comments about different gym classes! Next week I have BodyPump on my list to try as well as Zumba and, of course, Spin.

    You’ve gotta try overnight steel-cut oats…they’re AMAZING!! You do the same thing with them as you did with your oats, just heat the liquid first. I do mine with peaches, and it ends up tasting like peach rice pudding!

    Jenna, if you’re dying to try those cliff bars, pear, gingerbread and they have a pumpkin spice, you can get them online and sent to your door, yay for the internet!!! They’re even cheaper than Publix. I was just researching different Cliff products, but you can even ask at your Publix if they could get you that flavor. I can’t wait to try the pumpkin spice.     Hey Jenna-

    Congrats on making your own Greek yogurt! Just wanted to let you know that the yield you had from straining is not unexpected… it takes us three times more milk to make our Oikos Organic Greek yogurt than it does to make our regular organic yogurts. So getting 12 oz out of 32 oz is pretty spot on.

    Oh, and those oats look yummy… I’m going to have to try that!

    The same thing happened to me…I never thought I’d be able to drink coffee without sugar and now I like it much better that way.

    ahhh the world of black coffee! i only use rice milk in my coffee- no sugar because the rice milk is sweetened.. but i did recently discover “MimiCreme” to use as a coffee creamer or in anything that requires cream in a recipe.. its delish.. and made from almonds and cashews- and has literally NO sugar in it.. YUM

    Yummy breakfast! I am the same way about black coffee, but now, with a few packets of sweetener, there’s nothing I love more than that STRONG bitterness mixed with a little sweet πŸ™‚

    Yeah for Ryan coming soon! I have the same recent revelation with coffe. I quit using sweet n low and started stevia. Then one morning I did the same, and decided the black wasn’t that bad. What brand stevia do you use?

    I used to use Sweet Leaf stevia that I got at Whole Foods. I really liked it!

    hmm………I’m thinking it was this:

    combine 1 baked sweet potato with 1 can light coconut milk in the blender. process until smooth. Add a few pinches of sea salt and garam masala. Enjoy!

    I used 32 oz of Stoneyfield nonfat plain organic yogurt and strained it with a cheesecloth for about 8 hours at work. I’ve never tried the coffee filter method!

    I feel the exact same way about black coffee now.. I can’t drink it with sweetener anymore! Never thought I’d see the day!

    I love Bodypump classes, it is one of my favorite group exercise classes. You are already diligent about strength training, so you can use this to really push yourself… for me, it’s a good way to hit all the major muscle groups in one workout without getting antsy/bored/distracted since I am more of a cardio person. I’ll be interested in what you think about Zumba… for me, it’s not enough of a “workout” although it can be fun.

    Happy Friday! I like Body Pump, too- I can’t do it all the time or I get a little bored, but it’s definitely fun to mix in. It sounds like your gym has similar classes as mine, so I would also recommend Turbo Kick. I took it last week and really liked it! Have a great day πŸ™‚

    No! I WISH I had some but I can only find it at Whole Foods and therefore, I have to wait until I go there again after Thanksgiving in Tampa. I ran out a few weeks ago and they don’t sell it at my publix!

    Hi Jenna! I’d be very interested to hear your thoughts on Splenda vs Stevia sometime when you’re not working crazy hours! I still use Splenda and am willing to be swayed! πŸ™‚

    The reason I don’t use Splenda is because I have a personal hunch it increases my migraines. I’ve had migraines for about 10 years and it seems that when I use any artificial sweeteners it worsens them! Also, you can go to http://www.thetruthaboutsplenda.com to read more about splenda!

    Looks delish!

    I’m working my way to blacker coffee. I used to drink it light brown with Splenda… not I am medium brown with agave nectar! I’m making progress! πŸ™‚

    Jenna you must try body pump, it is amazing and fun and gets you in great shape! My gym over the summer had it and everytime I’m in a boring old stregnth training class, I miss it more and more.

    It works your whole body, will kick your ass in a great way!

    I’m so jeleous you have it near
