Fake Cakes?

Good morning!

I think I’m really going to enjoy my centerpiece design class. Its definitely unlike any class I’ve ever had because there is NO baking that goes on! We don’t bake the cakes we decorate—instead we use styrofoam cakes and just focus solely on the decorating aspect of it all. Last night we started making our croquembusch, a traditional European wedding cake made from pate a choux (the stuff you make eclairs from). It’s basically a tower of cream puffs, without the cream filling. We are decorating it tonight with nougatine and royal icing—pictures to come!

Can you believe I only have two more baking classes left after this??!!! After this class I have summer break (!!!!), then Chocolate and Sugar class then I have the final class in the program: Capstone—a culmination of everything I’ve learned in the whole program and the final testing of my ability. After that I move back to morning classes and finish up my academics with wine and cost control class. Then I’m done! Wow!

This morning I woke up, ate my usual half a banana with pb and went to the gym for a strength circuit. I started out on the treadmill, jogging for a few minutes to warm up, then I did lunges holding five pound dumbells, punching them each lunge down. This really works your back, shoulders and legs in one! I did 4 sets of about 12 walking lunges. Then came 21s with dumbells (curling up, mid and down for 21 reps—2 sets, 10 pound weights in each hand), rowing for my back, calf raises holding 10 pound weights and plank pose and side plank pose and a few yoga poses to stretch and build more core muscle. I feel like I did a couple more exercises for my upper body but I’m drawing a blank.

When I got back I toasted up an Ezekiel english muffin and had a good old fashioned pb&j. My favorite :). With more english breakfast tea of course! I’m finding a renewed love for this and I am also finding that I actually enjoy it a lot more than coffee. I love the robust taste to it.

I’m STILL excited to be able to eat the delicious leftovers of my Edamame and Corn salad for lunch today! I packed what was left of it along with a cold, baked sweet potato I will heat up in the microwave at work with a couple rice cakes for crunch. For my snack, I packed a ripe peach I’ve had sitting out on my counter as well as a small baggie of Cinnamon Harvest kashi cereal. This stuff makes great snacks!

    No baking??? I don’t know if I’d like that, since I’m a baking machine, haha; but hey, decorating cakes is fun as well!! Enjoy!! :0)

    Decorating styrofoam cakes? Haha that sounds pretty awesome.
    All of your classes actually sound really cool, that’s sweet that you get to switch it up so much and learn a little bit of everything.

    Happy early birthday…the coconut bundt cake looked awesome by the way. Just wanted to make a quick reccomendation. I know you eat pb&j on english muffins a lot (its one of my favs as well). If you like that you should try Hemp bagels sometime, or maybe you already have. They’re typically in the freezer section with the ezekiel products and they’re fabulous with pb&j plus they’re loaded with protien and fiber. anyway, enough about breakfast, have a great day!

    English Breakfast is a must for me every morning. I adore it so! It’s so relaxing and as you drink it more, you’ll notice there are slight hinted notes of sweetness! I only drink the decaffinated, though, as I don’t drink caffeine, and for me, personally, I enjoy the softness of the decaf tea! Twinings, of course 😉 The taste is actually V.E.R.Y. different with the decaf tea though, as you don’t have any harsh/dryness from the long steeping process… You get a very delicate dance across your palate! Do try the decaf some time!

    (PS) I saw Sex last night with my Mom and Grandmother, and it was beyond everything and more. I can’t wait to see it again and again and again! (And as you said, perfectly, it hit every single emotion in their heights!) So so so out of this world! 🙂

    Its nice that they have you focus solely on decorating in this class. I was wondering how you would have enough time to bake cakes and learn decorating at the same time…

    Lexi,

    No! Actually its a good thing we use styrofoam because we wouldn’t have enough time in a 3 week class to actually bake wedding cakes AND decorate them (that can take weeks to do just one cake!!). I already had cake baking class and this isn’t a baking class at all. its a “design” class where we really get to work on our technique in decorating.

    I’m pretty new at the whole blogging thing so i’m not sure how it works if you don’t already have a blog. I do know that through blogger you can create and account with just your email address and a password and that allows you to post without starting a blog of your own. Thats what I always did anyway. Hope that helps. 🙂
