Filling Lunch, Off To Make Pizza!

Hi guys! Sorry for the late lunch post but I’m here in Tampa now and about to run out and get the pizza dough and tons of veggies for the pizza I’m making for Ryan and I tonight! I actually ended up being able to work out this morning….it was a quick 25 minutes of cardio but at least it was something! I almost ran late to work because of it but was glad I got some physical activity in because I just hate to sit in a chair all day! I have gotta stretch my legs a little ! 🙂 After I worked out I made a really good cappuccino and had 7 almonds with it as a little snack.

At noon, I ate the lunch I had packed for myself, which was AWESOME! It really held me over till I had my snack at 4 when I got off work. I had a piece of leftover turkey-walnut meatloaf from last night, a piece of foccacia bread, 4 ounces of greek yogurt with pom. seeds, a juicy red pear and a salad with grape tomatoes and cucumbers drizzled with balsamic vinegar! Talk about yum! For a snack I brought 4 ounces of cottage cheese that I topped with 1/4 cup flax granola and more pom. seeds! I also drank a hot tea on my drive to Tampa.

I’m glad my lunch/snack is holding me over so well because Ryan is still at the office and I’m sure we won’t be eating before 7:15 at least. I’m excited to try this dough experiment though because he has a pizza stone and we never use it! Also, I just love this place’s dough because it is all natural. So delish!

I’ll keep you updated on how it goes—now off to the store!

My lunch today was about 520 calories and my cottage cheese snack was about 150. Off to make pizza!!

Oh, and I just turned on the heat in Ryan’s apartment and the fire alarm went off! oops! 😉

    Hi Jenna – you lunch does look delish!

    When you make your salads – do you buy pre-packaged salad mix? If so, any hints on how to keep it fresh if you don’t use it all?

    Have fun with the pizza! I have a pizza stone and I LOVE it. 🙂

    Hi Kristin-

    Yes, when I buy lettuce I buy prepackaged, prewashed organic mixed greens. Cuts down on a lot of time when I need a salad pronto! Plus I hate dealing with wet lettuce! It usually keeps fresh for about 5 days, which is about how long it takes me to eat it all…so it works out 🙂
