Breakfast/ Lunch

Gahhh

Hi everyone!

Eeeeek my day has definitely got like THIS so far:

Yes that is smashed cake. I’m just having one of those days where I think I should have stayed in bed….we all know everyone has them! It’s actually quite humorous all that has gone wrong today. And I’m not writing this to complain at ALL, I actually think it’s funny now! Here’s what happened:

This morning the internet was down (gahhh)

I banged my head (hard!) in the freezer at work

I put splenda in my tea and 30 minutes later got a migraine. I KNOW better…this is 100% my own fault!

I accidentally walked right into a breakfast meeting full of 70 men and one guy was in the middle of his speech……oops

My cake fell apart coming out of the cake pan and I had to redo the entire thing

And I can’t find unsweetened coconut flakes anywhere to save my life!!!!!!!!

Okay. That’s out of my system! I’m seriously not even in a bad mood right now, it’s just one of those days!!!!!

Let’s move on to the POSITIVE though! I completely 100% mastered the art of the breakfast cookie this morning and found a lifelong breakfast staple in my house……

Using 1/2 cup oats and 1/2 mashed banana makes ALL the difference because it really firmed up last night and was much more “cookie-like” this morning! I guess using more starch and less liquid is totally the trick…and it was very filling and held me over 3 hours just how I like my breakfasts to be. I used 1/2 cup oats, 1/2 scoop chocolate protein powder, 1/2 mashed banana, 2 tbsp silk and 1 huge spoonful almond butter. It was aaaaamazing!!!! Perfectly filling. I’ll have another please!

Around 9:30 I had a pure protein bar:

And then around 11:30 I had a hot bowl of my split pea soup for lunch along with a baggie of kiwi and grapes.

I got home around 3:30, STARVING, and ate half of a bagel that I made this morning at work with a big spoonful of peanut butter and blackberry preserves:

And I’m totally ready to release all my poopy day frustrations at BodyPump tonight! The class is from 5:30-6:30 so I’m leaving here in about 45 minutes. This will be my first time trying this class and I hear its intense. Good, I need it right now!

Today Adam did brighten my day by bringing me a quart of his family’s maple syrup!

His family lives on a farm in Vermont and really does bottle and sell this stuff themselves. Pretty cool! They also grow all organic veggies!! 🙂

I was SO excited to get this syrup because a) I can’t afford it myself and b) now I can FINALLY make some raw vegan macaroons! I took home some almond powder from work and then went and searched everywhere for unsweetened coconut flakes so I could make them tonight and have them dehydrate in my oven overnight tonight……..however, NO ONE carries unsweetened coconut here!!!!!!! I am so disappointed! Not sure what to do now…I guess I could just make them with sweetened coconut or I could find somewhere online that sells the good stuff and order it. Boo!

I’m off to do some laundry then hit the gym! See you tonight!

    Yikes! Sorry for your messy day. What was the fate of that poor chocolate cake?! I feel like it could have been quite tasty in a trifle or mashed together with some frosting!

    YES we all have those days and it is perfectly normal to vent!!!

    Some days I feel like I have a huge storm cloud hanging over my head! haha. I love your positive attitude- the only thing we can do in these times is to laugh! Otherwise, we will go through life very unhappy.

    I can usually find unsweetened coconut at food co-ops or well stocked health food stores- but it eluded me for a long time too!

    Hey Jenna! Sorry to hear your day was so bad, I love Body Pump so hopefully that should make it better. I have a question about that breakfast cookie, I just mix everything together and press it into the plate right? I don’t have chocolate protein powder (or any protein powder), is there something I can use as a substitute?

    I, too had problems finding unsweetened coconut in the past…my only source was Whole Foods 🙁 sorry about that.

    hey jenna!
    wow this post is full of all of my favorite eats.
    for the macaroons, you can use the sweetened coconut– the calories are higher (obv) but they still come out delicious. and (which i’m sure you know) use a lot less maple syrup– you can replace some of the maple syrup with apple sauce to moisten the mixture enough without sweetening it too much

    Splenda gives me a headache too, which really sucks because I like those Diet Hansen’s sodas.
    Of all the delicious-looking food on your blogs, I get most jealous of the bagels. Go figure.

    I love coconut and because of my gluten allergies I take no chances on buying coconut that is already processed. Fortunately at this time of year fresh coconuts are available at most produce departments and are not very expensive. Use an ice pick and a hammer place ice pick on each eye of coconut and hit with hammer. Place coconut upside over glass and drain liquid out of coconut. Then place the coconut on a hard surface and crack it open with the hammer. There are coconut scrapers that are available at mexican food stores and stores that cater to asian foods but I just use a grapefruit spoon to scrape the coconut out of it’s shell. I then store it in a freezer bag and keep it in the freezer bag for two months. This is the best way to coconut for coconut cake or macaroons or my favorite homeade almond joys. Good Luck Tonya
