Get Yer Lentils

Mornin’!

It was a very get-up-and-go kinda morning. I work at the wine center today and I just have a bunch of little stuff that I’ve got to get done. So, I started my day with some oatmeal pancakes for fuel!

And tea. Just ran out of my favorite Earl Gray and now am working my way through French Breakfast…I love the hint of vanilla in this.

Went to the gym for 25 minutes of elliptical + strength (via week 4 of Summer Shape Up!). I honestly don’t think I’ve worked out so hard in a really long time and I wish I would have thought to take measurements before I started with Gina’s plan because I feel like it’s leaned me up a lot, just doing different exercises than I’ve ever done before. Highly recommend Summer Shape Up to anyone who is looking for a little variety in their daily workouts and who wants to build mega muscle….my arms are feelin’ it fo sho.

Please vote for my Vegan Lentil Walnut Loaf over at the USA Dried Peas and Lentils Recipe Rivalry site! The first 500 people to vote get free bags of lentils, which is clearly incentive on its own.

Haha, I was expecting lentil pancakes too! I have to admit I’m a little relieved. I’m totally hooked on these pancakes now, though. Oatmeal pancakes, where have you been all of my life?

Lovin’ those cakes! Reading about all of your lentil chickpea adventures made me motivated last night to make some homemade pesto lentils with some greek spiced roasted chickpeas! It even ate my pigs-in-a-blanket-eating mom a bit jealous! 🙂

Random thought: Everytime I read “fo sho,” in my head I picture Steve Carrell saying it in the 40-Year Old Virgin. Anyone?

I love that pancake recipe! I usually sub in some gluten-free flour flour it, but it’s so nice how it holds together and is chock-fulla protein. 😀

I am loosely following Gina’s Summer Shape Up, incorporating her strength routines in with my regular cardio routines. Since I am, let’s say, a strength training ‘beginner’, her workouts are great. Oh, and they are kicking my booty, too! 🙂

Gina’s Summer Shape up is fantastic! I stumbled across it from a link on your blog a couple weeks back (thank you for that!). I’m doing week 2 right now and I actually did write down my starting weight and measurements. I’ve already seen a difference and can’t wait to see how much more progress I make by the end of the program. I love the strength and stretch days, but really struggle with the speed.
